Here’s a quick tip for testing your eggs. If you place your egg in a bow or glass of water, how it floats can tell you a lot about how old it is. If your egg sinks and lies flat on the bottom, it’s pretty fresh. If it sinks, but stands up straight up and down it’s starting to age a little, but probably still good. If your egg doesn’t sink at all, but floats right to the top it’s pretty old and is most likely a bad egg 🥚 As an egg ages carbon dioxide and moisture escape from the shell and are replaced by air. The air cell causes the egg to become more buoyant over time. How long to boil your eggs will depend on if you want a soft or hard yolk. Start by boiling a pot of water. Once the water is at a rolling boil, add your eggs with a spoon, slowly. You don’t want to eggs to fall to the bottom of the pot because they will crack. Now, the trick here is to let your water come to a slow boil and not a rolling boil. This will help the membrane around the egg to soften and separate rather than stick to it. This is how the shell just peels off without sticking! Softly boil for about 12 minutes (less if you want a runny yolk) and than drain and place in an ice bath. You’ll have perfectly peeled hard boiled eggs! It’s that easy.
