KABOCHA SQUASH Coconut Curry! No curry paste needed, just simple pantry spices. Velvety, chestnut-like kabocha squash is perfect in this comforting fall meal! // LINK in bio for the recipe! Kabocha Squash Curry (serves 4) 1 small kabocha squash (about 3 cups cubed) ½ tsp olive oil Salt & pepper to taste ½ small onion, chopped 1 clove garlic, minced 1 orange bell pepper, sliced 1 ½ cup (360 g) cooked chickpeas (cook from scratch for extra savings) 2 tsp curry powder ⅛ tsp nutmeg ⅛ tsp cinnamon ½ tsp chili garlic sauce (or ½ thai red chili/hot sauce of choice) 400 ml full fat coconut milk 2 tbsp tamari (or soy sauce) 2 cups (474 ml) vegetable broth (homemade for extra savings) 1 tbsp nutritional yeast ½ tbsp maple syrup 2 cups (60 g) spinach, packed Roast cubed kabocha squash at 400 F for 20 minutes, flipping halfway through. To make the curry, saute onion and garlic for 1-2 minutes. Add sliced bell pepper, cook 2-3 minutes until slightly softened. Add chickpeas (feel free to use frozen beans). Cook for 1 minute. Add curry powder, cinnamon, and nutmeg. Cook for 1 minute. Stir in coconut milk, tamari, chili garlic sauce and raise the heat slightly to allow the liquid to lightly boil. Reduce to a simmer. Add the vegetable broth and the squash. Return the liquid to a low boil, reduce to a simmer, and heat through for another 5 min. Stir in nutritional yeast, maple syrup and spinach to finish. Serve with brown rice, soba noodles, or roasted veg like broccoli. *Approximate Cost: 🇨🇦$10.45 using homemade vegetable broth and chickpeas cooked from scratch. $13.55 using store-bought vegetable broth and canned chickpeas. Kabocha Squash & Butter Bean Curry - Kabocha squash is like if a pumpkin and a butternut squash had a baby - not as sweet but that’s also a good thing?? - Recipe: 1. Soften kabocha squash by cooking whole in the oven for 20mins at 400F 2. Sauté 1 medium diced onion and 5 cloves of minced garlic in a generous amount of oil on medium-high heat until soft. Stir in 1 tsp garam masala, 1 tsp salt, 2 tsp curry, 2 tsp paprika, 1/2 tsp turmeric, a pinch of cayenne and cook for 30 seconds. 3. Peel and de-seed the squash, roughly chop, and add to the pan along with 3/4 can of coconut milk (I used light), saving the rest for garnishing. Cook on medium heat until the squash can be easily squished flat. 4. Add in 1 can of cooked butter beans (white kidney beans or Lima beans) and finishing cooking for a few mins, then garnish with coconut milk, chopped cilantro or parsley, and serve with bread! Note: you can cook the kabocha squash in the oven for longer until it’s fully softened to cut back on stove time, but to avoid the mushy mess I only do 20mins:) - #easyrecipe #dinnerideas #recipeideas #viral #fyp

Pumpkin Chickpea Curry 🍛🎃🫶🏻 Ingredients: • 1 small pumpkin or red kuri squash, diced • 1 tbsp red miso • 1 tbsp white vinegar • 1 tsp sesame oil • 1 tsp grated ginger • 1 tbsp maple syrup • 1 tbsp olive oil • 1 tsp curry powder • 2 cloves garlic, diced • 1/4 cup cilantro, chopped (plus more for garnish) • 2 green onions (white parts only), diced • 1 can coconut milk • 1 can chickpeas, drained and rinsed • Cooked jasmine rice (for serving) • Sesame seeds (for garnish) Instructions: 1. Preheat your air fryer to 400°F (200°C). Dice the pumpkin and set aside. 2. In a small bowl, mix together the red miso, white vinegar, sesame oil, grated ginger, and maple syrup. Pour this mixture over the diced pumpkin and toss to coat. 3. Place the seasoned pumpkin in the air fryer and roast for 15-20 minutes, until tender. 4. While the pumpkin is roasting, heat olive oil in a pan over medium heat. Add the ginger and curry powder, sautéing until fragrant (about 1 minute). 5. Stir in the garlic, cilantro, and the white parts of the green onion. Sauté for another 2-3 minutes. 6. Pour in the coconut milk, bring to a simmer, and let it cook for 5 minutes. 7. Once the pumpkin is done, puree half of it and add the puree to the coconut milk mixture. Stir to combine. 8. Add the chickpeas to the pan and cook for an additional 3-4 minutes. 9. Stir in the remaining roasted pumpkin pieces. 10. Serve the curry over jasmine rice and garnish with cilantro and sesame seeds. Bright orange on the inside, bursting with a sweet flavour that compliments the coconut and red curry so well 🧡 The outer shell can be quite tough to cut through, so I bake it whole first to make that whole process easier.
