Sticky soy glazed squash/pumpkin on the creamiest peanut lime sauce (and some steamy rice if that floats your boat)✨ The other day I had a Crown Prince pumpkin and it reignited my love of pumpkins/squashes. Can someone tell me why we are so obsessed with butternut squash in the UK?? It’s so average. This variety is nutty, sweet and rich and lends itself PERFECTLY to an umami, spicy glaze like this. Honestly I was in heaven and you will be to 🤝 RECIPE ½ Crown Prince pumpkin Olive oil and salt 2 tbsp hoisin 2 tbsp sriracha 1 tbsp agave 1 tbsp soy ½ tbsp rice vinegar 1 tsp sesame oil 1 garlic clove, grated 1 inch piece peeled ginger, grated 100g smooth peanut butter 2 tbsp water (more if needed) 3 tbsp soy sauce 1 lime juice 2 tsp agave To garnish: 1 tbsp white sesame seeds 1 tbsp black sesame seeds 1 tbsp chopped chives Your favourite chilli crisp 1. Preheat the oven to 180 fan or 200C. Take half the squash and remove the seeds. Cut it into 4-5 thick wedges, leaving the skin on. Place the wedges onto a tray, drizzle with a splash of oil and salt then place into the oven to roast for 45 min. 2. Whisk together all the ingredients for the glaze. After 45 minutes baste the squash wedges with the sticky glaze. Repeat again after 10 mins then switch to grill to caramelise the sauce. Baste as many times as you want to get a nice thick coating of the sauce. 3. Quickly whisk together the ingredients for the peanut sauce then get ready to plate. 4. Whilst the squash is still on the tray, sprinkle over mixed sesame seeds and finely chopped chives. 5. Serve on a bed of the peanut sauce and dive in! #squashrecipes #easyveganmeals #veganrecipeshare

Sticky Soy-Glazed Kabocha Squash I love and recommend this recipe because it’s naturally rich in fiber, vitamins, and slow-burning carbohydrates that keep your energy steady. The squash provides beta-carotene for immune and skin health, while the herbs and spices support digestion and make it deeply satisfying. It’s a cozy, nourishing dish that tastes indulgent but fuels your body well — especially during fall and winter 🌿 Created by the amazing @twistedgreen Roasted Squash: • ½ kabocha squash • Olive oil + salt Sticky Glaze: • 2 Tbsp hoisin • 2 Tbsp sriracha • 1 Tbsp agave • 1 Tbsp soy sauce • ½ Tbsp rice vinegar • 1 tsp sesame oil • 1 garlic clove, grated • 1-inch piece fresh ginger, grated Peanut Lime Sauce: • ½ cup smooth peanut butter • 2 Tbsp water (add more to thin) • 3 Tbsp soy sauce • Juice of 1 lime • 2 tsp agave Garnish: • White + black sesame seeds • Chives, chopped • Chili crisp (optional but highly recommended) How to Make It 1. Roast the squash: Preheat oven to 400°F. Cut squash into thick wedges (keep the skin on). Toss with olive oil + salt and roast 45 minutes. 2. Make the glaze: Whisk all glaze ingredients together. 3. Glaze the squash: Brush the roasted squash with the glaze. Roast 10 more minutes, then broil to caramelize. Re-baste if you want it extra sticky. 4. Make the peanut sauce: Whisk peanut butter, water, soy sauce, lime juice + agave until smooth and creamy. 5. Serve: Spoon peanut sauce onto your plate, top with the glazed squash, and finish with sesame seeds, chives + chili crisp. Optional: Serve with warm rice. Heaven. 🧡 #squashrecipes #kabochasquash #plantbaseddinner #easyveganmeals #vegandinnerideas #umami #comfortfood #wholefoodplantbased

Simple Roasted KABOCHA SQUASH! Let the chestnut flavour of kabocha squash shine by roasting it really simply. Add extra sweetness or savoury/salty flavour if desired but if you’re a purist you’ll love how simple this is! Simple Roasted Kabocha Squash 1 kabocha squash (or Japanese pumpkin) 1–2 tablespoon olive oil ½ tsp salt ¼ tsp black pepper 1 tbsp maple syrup, optional ½ tbsp tamari (or soy sauce), optional Preheat oven to 400 F & prepare a baking sheet with parchment paper or a silicone mat. Wash & dry the skin since you don’t need to peel this squash! Using a sharp knife, carefully slice the squash from the stem to the base using a rocking motion. Pull the two halves apart once you have the squash sliced all the way around and the stem will separate. *Microwave for 2-3 minutes to soften the squash if you’re having trouble cutting it. Use a spoon to scoop out the seeds & stringy membrane. Kabocha squash seeds are quite tough to chew but I usually roast them anyway. Separate them from the stringy membrane, wash, and dry them. Dispose of the stringy membrane or add it to your veggie scraps bag for homemade broth. With the squash deseeded, slice each half into half moons about one inch thick. Flip the squash so the cavity is facing the cutting board. Leave the squash in half moons or slice further into cubes. Brush or toss the cubes in oil & sprinkle with salt and pepper. Roast for 40 min if sliced in half moons and 20 min if cubed. Remember to flip the pieces halfway through. The squash is done when you can easily slide a fork into the pieces and they are lightly browned in places. *Feel free to brush or toss the pieces with maple syrup and tamari (or soy sauce) for a more sweet and savoury flavour. *To roast the seeds; toss them with a bit of oil, salt, and pepper, and roast alongside the squash for the last 10 – 15 min of the cooking time. Full recipe at 🖇️ in bio or visit ⤵️ https://tastythriftytimely.com/simple-roasted-kabocha-squash/ #tastythriftytimely #vegan #veganfood #veganrecipes #plantbasedfood #glutenfree #kabochasquash #kabochasquashrecipes #vegansofig #vegansofinstagram #healthyvegan #glutenfreevegan
