No bake lemon cheesecake! 🍋 ⭐️Ingredients for a 15cm round cake tin⭐️ Crust 🍪 80g biscuits 25g melted butter Crush the biscuits into fine crumbs, then mix with melted butter until combined. Press the mixture into the base of a cake ring or tin and chill in the fridge while you make the filling. Cheesecake 🍰 200g cream cheese 50g mascarpone cheese 50g sugar 30ml hot water + 2 gelatine sheets 150g heavy cream 10g sugar 5ml lemon juice Soften the gelatine sheets in cold water, then dissolve them in hot water. In a bowl, whisk together the cream cheese, mascarpone, sugar, and lemon juice until smooth. Stir in the dissolved gelatine mixture. In a separate bowl, whip the heavy cream with the sugar until soft peaks form. Fold the whipped cream into the cream cheese mixture. Pour the filling over the chilled crust and smooth the top. Refrigerate for around 2/3 hours or until set. Lemon curd 🍋 1 egg 50g sugar 50ml lemon juice 50g unsalted butter 1 gelatine sheet 10ml water Soften the gelatine sheet in cold water. In a saucepan, whisk together the egg, sugar, and lemon juice. Add the butter and cook over low heat, stirring constantly, until thickened. Remove from heat and stir in the softened gelatine. Let it cool slightly, then pour over the cheesecake. Chill until fully set. lemon cheesecake crust: 1 3/4 cups (210g) graham crackers (14 sheets) 5 tbsp (71g) melted unsalted butter 1/8 cup (25g) sugar *crush graham crackers into crumbs. mix in the melted butter and sugar well. press into the bottom and sides of a 9 inch springform pan and bake at 350 for 10 min. cheesecake: 1 cup (200g) sugar 1 tbsp (6g) lemon zest 24 oz (608g) cream cheese 1/2 cup (120g) lemon juice 1/3 cup (80g) greek yogurt or sour cream 1/4 cup (60g) heavy cream 1 tsp (4g) vanilla 2 eggs + 1 egg yolk *make sure everything is at room temp! zest lemon into the sugar and mix it by gently pinching and rubbing the zest into the sugar. set aside. in a large bowl, cream together the cream cheese and lemon sugar until smooth. then mix in the greek yogurt, lemon juice, and vanilla until smooth. then mix in the heavy cream well. finally, gently fold in the eggs one at a time. pour into the already baked crust (using a hot water bath is best). bake at 350 for 55-65 min (it should be slightly jiggly in the middle but set on the sides). once done, turn off the oven and let cool with the door closed for 20 min, then open the door slightly and let cool for another 30. afterwards, take out of the oven and let finish cooling in the water bath. lemon curd topping 1/2 cup (100g) sugar 1 tbsp (3g) lemon zest 3 egg yolks 1/4 cup (50ml) lemon juice 1/4 cup (57g) cold unsalted butter *zest lemon into the sugar and mix it by gently pinching and rubbing the zest into the sugar. add in the egg yolks and whisk until its combined. mix in the lemon juice and then gently heat on the stove until it thickens and is pale. note: low temperature and continuous mixing so that it heats evenly. remove from heat and add in the cold butter. mix until all melted and let cool. #lemon #cheesecake #lemoncheesecake #baking #recipe

(Get the recipe below) Crust: 400 g any sweet biscuits (crushed) 120 g melted butter Instructions: Combine the ingredients. Press the mixture down in a 22 cm springform and bake at 200°C for 8 min. Cheesecake filling: 600 g creamcheese 160 g sour cream or creme fraiche 180 g sugar 3 eggs Zest from 1/3 of a lemon + juice from 1/2 lemon Instructions: 1. Combine creamcheese with creme fraishe and whisk by hand. Add in the sugar and whisk again. Lastly add the eggs and the lemon and whisk till the mixture is homogeneous without any lumps. 2. Pour in the cheesecake into the prepared springform and bake in the oven at 160 C, 45-60 minutes - place a waterbath in the second oven rack or at the bottom - seperating it completely from your springform. The cheesecake has to be slightly jiggly when its done. Let it cool down in the oven for 10-20 and then place it in the fridge over night. Lemon Curd 125 ml lemon juice 3 eggs 100-125 g sugar 70 g butter 1. Add lemon juice, sugar and eggs in a saucepan and heat it up on low to medium heat. 2. Stirr constantly until it starts to thicken. When you start seeing a change in thickness, add your butter and keep stirring until you reach a thick curd. Mascarpone topping 250 g mascarpone 100 g heavy/whipping cream 50 g icing sugar Instructions: 1. With an electric mixer, whisk together the mascarpone and icing sugar till smooth. Add in the heavy cream and whisk for around a minute or 2 till it thickens. Be careful not to overmix - i recommend mixing on medium to high speed. When the cheesecake has reached room temp. you can spread on the mascarpone topping followed by the lemon curd. Let the cheesecake set overnight or 5-6 hours in the fridge if served the same day. Vanillepuddingpulver oder 40 g Speisestärke • Zitronenabrieb • ein paar Tropfen Zitronenaroma Lemon Curd: • 3 Eier • 180 g Zucker • 100 g Butter • 100 ml Zitronensaft (aus 2 Zitronen) • Schale/Abrieb von 2 Zitronen ⸻ 👩🍳 Zubereitung 1. Boden Kekse fein mahlen, mit der Butter mischen, in eine 26-cm-Springform drücken und kaltstellen. 2. Creme Alle Zutaten glatt rühren. Auf den Boden geben, Form 2–3× leicht aufklopfen. 3. Backen Bei 170 °C Ober-/Unterhitze 55–60 Min. backen. Ofentür 30 Min. einen Spalt offen lassen, dann vollständig abkühlen lassen. 4. Lemon Curd Zitronensaft, Zitronenschale, Zucker und Eier im Topf verrühren. Bei mittlerer Hitze unter ständigem Rühren erhitzen (nicht kochen!), bis die Masse andickt wie Pudding. Vom Herd ziehen, Butter einrühren, bis alles geschmolzen & glatt ist. Optional: durch ein Sieb streichen für extra Glätte. 5. Fertigstellen Lemon Curd lauwarm auf den kalten Cheesecake geben und glattstreichen.
