4 desserts , 1 base For beauty, a resilient gut, strong ligaments, thick skin, anti-inflammatory support, blood sugar regulation, liver detox support, calming effects, and of course deliciousness. First, I created my Cranberry Compote You’ll need: * 1 cup fresh cranberries * 2–3 tbsp honey (or jam or maple syrup) * ½ cup water (adjust depending on how saucy you want it) 1. Heat everything on low, stirring occasionally. The cranberries will start to pop after 10–15 minutes. 2. When it looks glossy and jammy, turn off the heat. Second, I bloomed 2 tablespoons of gelatin in ½ cup of water. Let it sit for about 10 minutes to thicken.
(I used Great Lakes Wellness gelatin — grass-fed, the most affordable one I’ve ever seen - Amazon.) Third, in a pan heated on low, I added the juice from my compote, plus 2–3 tablespoons of raspberry jam and the bloomed gelatin. I stirred until there were no more clumps — this became my sweet, tangy, gelatinous base. From this base, I made 4 different desserts: 1. While still warm, I poured the base into small cups and added some of my cranberries from the compote. 2. Same as above, but after letting it set in the fridge for 2–3 hours (until it became gummy-like), I topped it with A2 yogurt from Ferme Phylum - Marché des Saveurs at Jean-Talon Market, mixed with cacao powder and sliced apples. 3. Same as the first one, but I added a sprinkle of cinnamon, then topped it with sheep’s yogurt - Avril. 4. Same as the first one, but I added fresh cranberries, chokeberries, and cinnamon. #raypeat #peating #prometabolic
