Here, Will Murray shares 10 fundamental plating movements he learned in Michelin-level kitchens and refined at Fallow. These are not trends. They are tools that allow chefs to express clarity on the plate. 10 Essential Plating Movements 1. The Clam – Pull sauce toward you and place at a 90° angle 2. Straight Drag – Clam, then pull straight back with a palette knife 3. Pointed Drag – Swipe at a 70° angle for a sharp, continuous line 4. Round Pool – Spoon sauce, tilt plate, tap to level into a circle 5. Dots – Bottle stays still. Clean pressure creates perfect dots 6. Tadpole – Squeeze and flick for controlled motion 7. Clam Swipe – Lift slightly and pull along the plate edge 8. Spoon Drag – Use the spoon tip, pull, stop sharply 9. Round Swipe – Curved motion using the side of the spoon 10.
