This might be an unpopular opinion… but yes, you do need a banneton. 🫢 New bakers often wonder if they can get away without one…I know because I tried for a while when I first started. It wasn’t until I finally got one (about 6 months in) that it clicked. Everything suddenly worked better — my dough held its shape, my crust improved, and scoring became so much easier. 🍞 A banneton helps wick away surface moisture, supports your dough so it doesn’t spread, and gives you that beautiful, artisan-style crust. There are lots of options out there, but my go-to is rattan or wood pulp. I’ve tried plastic and silicone, and honestly they were a waste of money. If you don’t have one yet, a loaf tin is your best backup. I don’t recommend the kitchen-towel-in-a-bowl method — it just makes things harder. What is a banneton basket? -A small basket usually made from rattan or wood pulp that’s used to hood the shape of sourdough bread. They are built to allow the dough to breathe during the proofing process. How should I clean a banneton basket? -You don’t necessarily have to wash them after each use (I never do!), but it is important to keep them from having too much excess flour. Once your sourdough is in the oven baking, you can bang the banneton over a bin (I use the sink) to release excess flour. You can also use a clean paintbrush or toothbrush to dislodge the flour. Once the excess flour has been removed, allow the banneton to air dry for at least two hours before putting it away. How should I store my banneton? -Banneton baskets are best stored somewhere with good air flow (this helps prevent mold). Avoid placing in plastic bags - or anywhere where moisture can form. Do I have to use a banneton? -No. Although a banneton is optimal, there are many things you can use instead: mixing bowls with a cloth, wicker bread baskets etc. you can basically use anything you have that will allow your dough to maintain its shape during proofing - I have my favorite baskets linked in my Amazon store (check bio!). If you proof your dough overnight in the fridge, and use a lined proofing basket (aka banneton) you might have noticed the liner gets wet. If you don’t use a liner, your banneton will get damp instead. To avoid any mould growing on your baskets, it is important to dry these thoroughly at the end of the proofing. How to do it? After you have baked your loaf, once the oven cools down a bit, pop the baskets and the liner in the oven. Leave it there for a while. In winter time, I would place the baskets on the radiators instead. After having had the mould issue in the past, I’ve learnt my lesson and always dry my baskets. This is way more common than people think ,and it’s totally manageable. These bugs are attracted to flour and moisture, which is exactly what proofing baskets are exposed to during sourdough baking. That’s why cleaning, drying, and proper storage matter so much. Don’t have banneton baskets? Don’t worry! You can make your very own proofing basket with things you already have in your kitchen. Want to bake an oval loaf? Grab a bread pan and a non-textured dish towel. Place the dish towel in your bread pan and then place the dough in the pan. If your dough is sticky you can flour the dish towel. Then cover your pan and toss it in the fridge for the night. Want to make a round loaf? Just grab a mixing bowl, soup bowl or any container about the size of your loaf. Use the same non-textured dish towel and you’re all set. And before you all come at me for this … yes I have banneton baskets and yes I love them. But I didn’t always have baskets and I still wanted to make artisan bread. This hack works great … in fact I still do this often when I run out of baskets on big baking days. So if banneton baskets aren’t in your budget right now, you can still make amazing bread. Just be creative and use the things you’ve already got in your kitchen. Have you tried this trick before? Sourdough Bread Recipe for Beginners Step-by-Step Tutorial INGREDIENTS • 500g unbleached bread flour (4 cups) • 350g water (1½ cups) • 100g active sourdough starter (1 cup) • 10g salt (1¾ tsp) DIRECTIONS Starter Prep: Feed your starter and let it peak. I feed my starter the night before so it’s ready to use in the morning… 12g Starter 60g Flour 60g Water *You can feed your starter however you want. Step 1: Mix the Dough Combine starter + water. Mix until foamy. Add flour and salt. Mix until dough forms. Cover and rest for 1 hour. Bulk fermentation starts now. Step 2: Stretch & Folds Do 4 sets of stretch & folds, 30 minutes apart. Keep dough covered between sets. Step 3: Finish Bulk Fermentation Cover dough & let rise at room temp until ready. Timing will vary based on environment. Step 4: Shape the Dough Dump dough onto a lightly floured surface. Shape into a round or oval. Transfer to a banneton or proofing basket (seam side up). Cover. Step 5: Cold Proof Refrigerate for 12–48 hours. Step 6: Preheat Preheat oven to 450°F with empty Dutch Oven inside for 45 minutes. Step 7: Score & Bake Place dough on parchment paper, score and transfer to hot Dutch oven. Cover with lid. Step 8: Bake Bake at 450°F for 30 minutes (lid on). Remove lid and bake 12-15 more minutes until golden. Step 9: Cool Remove bread and let cool at least 1 hour (2 hours is best) before slicing. Klingt erstmal kompliziert, ist aber ganz einfach Das Gärkörbchen optimiert den Gärprozess deines Teiges, sodass das Brot später besser gelingt. Vier Gründe, warum du ein Gärkorb nutzen solltest: 1️⃣ Regulierung der Feuchtigkeit: Das natürliche Material nimmt Feuchtigkeit vom Brotteig auf. Dadurch erhält das Brot beim Backen eine schönere Kruste und werden häufig innen fluffiger. 2️⃣ Eine stabile Form: Durch das Gehen des Teiges im Gärkörbchen „gewöhnt“ sich der Teig an die Form. Die Teiglinge verlaufen später auf dem Backblech nicht so stark und man erhält ein ansprechendes Brot! 3️⃣ Gute Wärmespeicherung: Im Gegensatz zu Metall oder Plastik kann der Holzschliff die Wärme speichern und gleichmäßig abgeben. Auch Zugluft hat keine Chance! Stuck on shaping sourdough? Shaping used to be one of my least favorite steps. I’d spend all day babying my dough, getting the fermentation just right… only to get to shaping and feel like I was about to mess everything up. But shaping is a really important step to master for a few reasons: 🍞 it redistributes air bubbles for a more even crumb 🍞 it reorganizes the gluten network so the dough can hold its shape 🍞 it builds surface tension so your loaf rises up instead of out So here’s my super simple method for shaping both a round and oval sourdough loaf: 1️⃣ Gently turn your dough out and pull it into a rough rectangle. 2️⃣ Fold the top short side down toward the center, then fold the bottom short side up over it (like folding a letter). 3️⃣ Rotate the dough and repeat the same process with the remaining sides. 4️⃣ Flip it seam-side down, then use your hands to gently push and pull the dough against the counter to round it into a ball. This is what builds surface tension and helps seal the seam. 5️⃣ If you’re using a round proofing basket, you’re done here 6️⃣ If you’re using an oval basket, use your hands or a bench scraper to pull the dough toward yourself on the counter to gently elongate it into an oval.
