Let’s talk banneton baskets! 🧺💰 Do you really need to spend big bucks on a fancy one? Nope. I learned a long time ago that some things are worth splurging on, and others… not so much. My go-to proofing baskets? Super inexpensive, easy to clean 🧼, take up way less space in the fridge, and work perfectly. And my liner? Brace yourself—it’s a medical-grade hair bouffant 🏥👩⚕️. Non-stick, reusable (or disposable), and dirt cheap. Game changer. If you want the links to the baskets and liners I use, just comment “link” and I’ll send them over! 🛒🍞 #SourdoughTips #BannetonHack #SourdoughBaking

This might be an unpopular opinion… but yes, you do need a banneton. 🫢 New bakers often wonder if they can get away without one…I know because I tried for a while when I first started. It wasn’t until I finally got one (about 6 months in) that it clicked. Everything suddenly worked better — my dough held its shape, my crust improved, and scoring became so much easier. 🍞 A banneton helps wick away surface moisture, supports your dough so it doesn’t spread, and gives you that beautiful, artisan-style crust. There are lots of options out there, but my go-to is rattan or wood pulp. I’ve tried plastic and silicone, and honestly they were a waste of money. If you don’t have one yet, a loaf tin is your best backup. I don’t recommend the kitchen-towel-in-a-bowl method — it just makes things harder. Comment OPTIONS and I’ll send you the links to my favourite bannetons. #sourdough #proofingbasket #banneton #beginnersourdough

A banneton, or bread proofing basket, is a rattan basket used to hold and shape bread before it bakes (don’t forget to transfer the bread into a dutch oven before baking)! Bannetons come in different shapes and sizes, most notably round and oval. Some banneton baskets come with a cloth liner, which you can keep on while the bread proofs. This is what I do (after dusting it with some flour). However, you can remove this cloth to reveal the spiral or ring-like pattern of the basket. This pattern will imprint on your dough as it proofs, which some people like for aesthetic reasons. A banneton isn’t necessary — you could use any bowl to help the dough keep its shape while it proofs overnight in the fridge. Using a banneton is merely an option if you wanted something nicer looking to proof your bread in, or if you like the spiral design it can make on your dough. I have a banneton because I think they look nice and it came in a set of bread making accessories that I purchased last year. Do you use a banneton? Why or why not? #breadmaking #sourdoughbread #breadbaking #breadmaking #bannetonbasket #breadproofing #sourdoughloaf #breadofinstagram

What is a banneton basket? -A small basket usually made from rattan or wood pulp that’s used to hood the shape of sourdough bread. They are built to allow the dough to breathe during the proofing process. How should I clean a banneton basket? -You don’t necessarily have to wash them after each use (I never do!), but it is important to keep them from having too much excess flour. Once your sourdough is in the oven baking, you can bang the banneton over a bin (I use the sink) to release excess flour. You can also use a clean paintbrush or toothbrush to dislodge the flour. Once the excess flour has been removed, allow the banneton to air dry for at least two hours before putting it away. How should I store my banneton? -Banneton baskets are best stored somewhere with good air flow (this helps prevent mold). Avoid placing in plastic bags - or anywhere where moisture can form. Do I have to use a banneton? -No. Although a banneton is optimal, there are many things you can use instead: mixing bowls with a cloth, wicker bread baskets etc. you can basically use anything you have that will allow your dough to maintain its shape during proofing - I have my favorite baskets linked in my Amazon store (check bio!). Dough sticking to your banneton? Aside from any recipe issues- it might be that you haven’t properly seasoned your banneton basket yet! In this video, I show you how to season your sourdough proofing basket to make it nonstick and easily release the dough before baking. If you proof your dough overnight in the fridge, and use a lined proofing basket (aka banneton) you might have noticed the liner gets wet. If you don’t use a liner, your banneton will get damp instead. To avoid any mould growing on your baskets, it is important to dry these thoroughly at the end of the proofing. How to do it? After you have baked your loaf, once the oven cools down a bit, pop the baskets and the liner in the oven. Leave it there for a while. In winter time, I would place the baskets on the radiators instead. After having had the mould issue in the past, I’ve learnt my lesson and always dry my baskets. Your dough might be doing everything right… until it hits the fridge 👀 Cold fermenting in a bowl traps moisture, leaving you with a stickier dough, weaker structure, and a less-than-crispy crust. A proofing basket helps wick away that excess moisture so your dough can hold its shape, rise beautifully, and bake up with that gorgeous crust you’re after. It’s a small switch that makes a BIG difference. Comment BASKET and I’ll get you set up with the right one 🧺 #sourdoughsorcery #sourdoughtips #sourdoughbaking #sourdoughforbeginners #sourdoughtools

This little step of shaping gives your bread even better rise - but don't go too wild and tuck the flour into the middle from the edge of your basket. That extra flour can make the bottom of your loaf tough. And yes we LOVE the @brodandtaylor baskets, they create the most beautiful loaves 🧡 Happy Baking! #sourdough #sourdoughbread #sourdoughbaking #sourdoughstarter #bread

Stitching your sourdough after you shape it and put it into the proofing basket can help add some extra tension to your loaf before it undergoes its final rise or proof. I like to wait at least 15-20 minutes, ideally 20-30, before I stitch up my loaf. Anytime you work with the dough, the glutens tighten up and you need to allow them to relax before you start working with the dough again otherwise it’s very difficult and the dough won’t do what you want it to. #sourdough #bread #breadmaking

comment BASKET for my fav amazon bannetons! 🧺 i have purchased each of these packs at various times because sometimes they sell out. keep an eye on them because the do come back in stock eventually! although it’s possible to buy bannetons in bulk from manufacturers, they often require you to order hundreds at a time. this was never practical for me! i’ve seen other bakers use wicker dinner roll baskets with tea towels as a banneton alternative, but i find these to be worth the cost because they are stackable and have stronger sides (this helps the bread keep a tall shape). #banneton #sourdough #sourdoughbread #microbakery #cottagebakery #homebakery #homemaker #sourdoughbaking
