salt bread recipe 290gr tepung protein tinggi 72gr tepung protein rendah 20gr susu bubuk 22gr gula 7gr garam 6gr ragi instan 145gr air dingin 85gr susu cair dingin 30gr unsalted butter untuk dough 200gr salted cold butter (bagi 10 untuk bagian isinya) Step : - gabungkan tepung protein tinggi,tepung protein rendah,susu bubuk,gula,ragi, mix sampai tecampur rata - Masukan air yang sudah dicampur susu secara bertahap, pastikan suhu air dan susu dingin (kalau gw 15 menit dulu didiemin di freezer sebelum di gabungkan), mix sampai bahan kering dan cairan menjadi satu - setelah tercampur masukan garam dan butter( - mixer lagi kurang lebih 12 menit (pokoknya sampai kalis) - rest dough selama 50 menit - keluarkan angin didalam dough setelah di rest, lalu bagi menjadi 70gr per adonan - bentuk dough memanjang dan mengerucut, pipihkan memanjang lalu masukan butter yang sudah dipotong dibagian dough yang lebih lebar - gulung dough dari sisi ujung ke ujung lainnya - rest lagi selama 50-60 menit (pokoknya double in size) - setelah itu semprot dough menggunakan air, dilanjutkan dengan taburan sea salt dibagian atas dough nya - bake di oven kurang lebih 12-15 menit (220 derajat api atas,210 derajat api bawah) sesuaikan dengan oven masing-masing ya - udah jadi,cobain deh

Have you tried the 3 types of salt bread (shio pan, 塩パン)? 🧈🥐🍞🥖 In Japan they vary from: semi hard crust, soft crust and hard crust! Sound on for this one, you can hear the difference in texture when slicing them. 🔊 Earlier this year when I was in Japan I was able to talk to some of my favourite bakeries that shared their tips and tricks on how they make their salt bread. I couldn’t choose just one… so I developed the 3 types. HOW TO MAKE SALT BREAD 🥐 i wanted to answer some of the questions i was getting about my salt bread recipe so i wanted to make a longer more in depth tutorial recipe link: https://erinscozykitchen.com/recipe/salt-bread-shiopan/ comment “recipe” to receive the recipe via DM! or look up “erinscozykitchen salt bread” on google and it should be the first link that pops up! - can i replace milk powder with milk: yes you can just replace some or all the water with milk but it will change the crumb and texture and browning, if u can i would recommend using milk powder - why cold water: when you knead your dough it will rise the temp and you want it to end up at around 78 fahrenheit when u go to do the first rise. high dough temp will affect the taste and gluten development of the dough - why is my dough sticky: your dough has either gotten too high in temp that the gluten is breaking down or you haven’t kneaded it long enough and it’s just underdeveloped (DONT add more flour to your dough just bc it’s sticky while you’re kneading it shouldn’t need any flour if you kneaded it long enough) - how long do you knead: this depends on your mixer and speed, with my ooni halo pro it took me about 14 min total but with a kitchen aid it could take longer and by hand even longer - where is my salt bread pan from: i got it in korea at bangsan market! it's a neighborhood that sells a lot of wholesale baking and packaging supplies. i couldn't find anything similar in the states but tbh i don't think it really makes that big of a difference! tips: • make sure you fridge your butter after you cut it, you want to roll it up with hard/cold sticks of butter • for cute fat salt bread make the top width of your rolled out inverted triangle short • start preheating your oven around 25 min after your final shaping while they’re rising so they’re not overproofed by the time your oven is ready STORAGE • salt bread tastes best fresh out of the oven! if you don’t finish them freeze them in a ziploc and to reheat, air fry at 350 f for 5-8 min please comment if you have any other questions and i will try to answer 😀 #saltbread #shiopan #소금빵

my beloved salt bread aka shio pan 💛 a couple other notes I made: - before adding the butter into the dough, mix the wet and dry on a low/medium speed until no dry flour remains. Then add the cold butter, cranking up the speed to 6. - I kept the butter that gets rolled inside the bread portioned in the freezer prior to shaping to keep them cold and solid. - if proofing in the oven, keep the light on and spray a bit of water inside prior to proofing. - USE A NONSTICK TRAY (learnt that one the hard way) I used @erinscozykitchen shio pan recipe and it’s delicious ☺️ #easyrecipe #foodie #cooking #food #easyrecipes
