Split pea soup -4 cups dried split peas -3 tbs olive oil -3 medium yellow onions (dices ) -8 Medium carrots (diced) -7-8 celery stalks (washed and cut thinly) -place celery leaves from 1 bag of celery (washed )and 1 bag of parsley (washed )in to a soup sack. -2 Tbs onion powder -2 Tbs garlic powder -Salt and Black pepper to taste -3 litres +3 cups of water Instructions: 1. Rinse the split peas under cold water and set aside. 2. In a large pot, drizzle olive oil over medium heat. Add the chopped onion, carrots, celery. Cook, stirring occasionally, until the vegetables are softened, about 5-8 minutes. 3. Add the split peas, spices ,mix to combine ,add in the water and the soup sack . 4. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 1 to 1 1/2 hours, stirring occasionally, until the split peas are soft and the soup has thickened. 5.Season the soup with salt 6.Serve hot, garnished with chopped fresh parsley or croutons enjoy! #soup #splitpeasoup #easydinner

Yellow split peas might not sound that exciting, but trust me when I say that this dip is it! Serve it with your favourite crusty bread for the best snack ever. It’s also delicious served with grilled seafood such as octopus which is how I enjoyed it in Greece ✨ This recipe was adapted from @mygreekdish, I added double the amount of garlic and added fresh rosemary and bay leaves to the mix. On my second attempt I also soaked my peas overnight and boiled them until very very soft. This isn’t at all necessary, but it definitely gave it a smoother, creamier result. INGREDIENTS ▢1 Tablespoon of vegetable oil ▢ 1 medium yellow onion, diced ▢ 2 cloves of garlic, minced ▢ 1 large carrot, diced ▢ 2 ribs of celery, sliced ▢ 2 cups of split peas ▢ 6 cups of vegetable broth ▢ Salt and pepper, to taste INSTRUCTIONS Heat oil in a large pot (with a lid) over medium heat. Add onion, garlic, carrots, and celery, and sauté for 5 to 7 minutes. Add split peas, water, and Knorr® Selects Vegetable Granulated Bouillon, cover with the lid, lower the heat to a simmer, and cook for 45 minutes. Uncover and cook for 15 minutes. Anyone else get excited about Split Pea Soup? Split Pea and Ham Soup 1 ham hock 2 tablespoons olive oil 3 tablespoons unsalted butter 1 cup finely chopped yellow onions 1/2 cup finely chopped celery 1/2 cup finely chopped carrots 1 teaspoon salt, or as needed 3/4 teaspoon freshly ground black pepper 2 teaspoons minced garlic 1 pound dried split peas, rinsed under cool water and drained 1 pound Smithfield ham, diced 1/4 teaspoon crushed red pepper flakes 8 cups chicken stock or water 1 bay leaf 2 teaspoons fresh thyme or 4 sprigs fresh thyme Croutons, for serving (optional)   Score the ham hock. Place in a pot, cover with water and bring to a boil. Reduce heat and let simmer until the hock is very tender, usually 1 ½ to 2 hours. Set aside while you prepare the ingredients for the soup.   In a large soup pot or Dutch oven, heat the oil and butter over medium-high heat. Add the onions, celery, and carrot, and season lightly with some of the salt and pepper. Cook, stirring, until tender, 3 to 4 minutes. Add the garlic and cook, stirring, for 30 seconds.  Add the drained peas and stir for a minute or two to coat the peas with the aromatics. Add the reserved ham hock and ham hock broth, the diced ham, chicken stock, remaining salt and black pepper, crushed red pepper flakes, bay leaf and thyme, and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until the peas are tender, about 1 hour. (Add more water if necessary should the soup become too thick.)    When the peas are tender and the soup has reached the desired thickness, remove the ham hock and pull any meat from the bone; tear it into small pieces, and put the meat back into the soup (or use it as a garnish). Discard the hock bone and thick, fatty skin.  Remove the bay leaf and discard. Adjust the seasoning, to taste, and puree the soup as desired using an immersion blender. (Alternatively, puree a portion of the soup in a blender and return it to the pot.)   Serve immediately, garnished with croutons if desired.    Yield: 8 servings

Split Pea & Courgette Curry 🌿 RECIPE - This super delicious lentil curry is one of my all time favourites. The flavours absorbed into the split peas and courgettes give it such a unique taste! Enjoy with rice or roti’s, and a dollop of yogurt on the side! Bliss! Recipe below, save for later!!! Ingredients 1 cup Yellow split peas (chana dal), wash and soak overnight 1 Large Courgette, peeled & cut into 1inch slices then halved, or baby courgettes 1/4 cup Corn oil 1 Medium onion, finely diced 2 tomatoes, diced 2 Garlic cloves, minced 1/2 inch piece Ginger, grated 1 tsp Salt, or to taste 1 tsp Coriander powder 1 1/2 tsp Cumin powder 1/2 tsp Turmeric powder 1 tsp Red chilli powder, or to taste 1/4 tsp Ground black pepper 1 Whole clove 1 Tbsp Fresh coriander, finely chopped 1/2 a Lemon, juiced 1 cup Water Method Step 1 - In a medium sized pot/saucepan, on medium heat, add the oil, once hot, add the onions, fry till golden and then add the garlic and ginger, fry till fragrant. Next add the tomatoes, mix well and fry until the oil starts to separate from the paste. Now add the dry spices, stir fry for a minute. Step 2 - Add the split peas. Stir fry for 5 minutes and add 1 cup of water. Cover and simmer for 30 minutes or until they have softened (to your preference). Step 3- Now add the lemon juice, courgettes and fresh coriander (1 tbsp). Stir well and cook for a further 10-15 minutes.
