All you need 👇🏼 1-2 medium sweet potato, diced 1 cup chickpeas, drained 1 tbsp olive oil Pinch of sea salt 1/2 tsp pepper 1/2 tsp paprika 1/2 tsp thyme For the rest of the salad: 1 cup quinoa 2 cups kale, finely chopped 1/2 cucumber, diced 1-2 tbsp pumpkin seeds 2-3 tbsp feta, crumbled For the dressing: 1 tbsp dijon mustard 1 tbsp EVO 1/2 tbsp honey 1/2 -1 tbsp water Preheat oven to 180 degrees C and line a baking tray with paper. Chop the sweet potato into cubes and place on tray. Pat dry chickpeas with a paper towel to remove the skins. Place the chickpeas onto the tray with the sweet potato. Drizzle in olive oil and season generously. Roast for 35 minutes. In the meantime, prepare the quinoa as per pack directions. Chop the kale and dice the cucumber. Make the dressing by mixing all the dressing ingredients together. In a large bowl, add all the salad ingredients together along with the roasted sweet potato and chickpeas. Drain your can of chickpeas, then add that to the pan as well. Pour 2 tbs olive oil over all the chickpeas and veggies, then season with 2 tsp coriander,2 tsp cumin, 1 teaspoon of garlic powder, as well as salt and pepper to taste. Put in oven for about 25 to 30 minutes until sweet potatoes are cooked and everything looks a little crispy.
