Breakfast burrito… but no tortilla 👀 I personally love a good breakfast burrito, especially with a thick slice of avocado… so I was inspired to make a potato roll version instead of using a flour tortilla. It’s honestly so quick, works surprisingly well, and feels a little lighter too. No flour tortilla, no deep frying — just crispy potato, eggs, cheese, and your favorite fillings rolled up together. You can totally switch it up with chorizo, ham, different cheeses, whatever you have in the fridge. I had mine with bacon, avocado, cheddar, and a generous drizzle of Mexican-style hot sauce and it was so good. I’ve been making this on repeat for our breakfasts lately 🤍 Save this one for when you’re craving a breakfast burrito but want something a little different. 🥔Crispy Potato Egg Cheese Roll (Breakfast Burrito Inspired) Ingredients 1 russet potato 2 eggs Salt Oil Cooked bacon Avocado Cheddar cheese Hot sauce (optional) Instructions 1. Prep pan Lightly oil a pan over medium heat. 2. Potato layer Peel the potato directly into the pan using a peeler. Spread the thin slices evenly into a flat layer. 3. Add egg Crack 2 eggs over the potatoes and spread evenly. Lightly salt. Cover with a lid and cook 2-3 minutes until eggs are mostly set and the potato bottom is lightly browned. 4. Fill & roll Add bacon, avocado, and cheddar on one side. Carefully roll into a tight log. 5. Finish Cook another 2–3 minutes until crispy and cheese is melted. Vegan, Gluten-Free 3-ingredient SWEET POTATO TORTILLAS! 😍👏🏼👏🏼👏🏼 These tortillas are a dream come true - they are one of my favorite recipes to make! Super soft, delicious, and SO easy to make! Serve them with dinner, lunch, or breakfast! I love making a breakfast wrap using these with eggs, avocado, and hot sauce for a delicious morning wrap! If you have sweet potatoes laying around - go make them. Ingredients: 1 1/2 cups mashed sweet potatoes 1 1/3 - 1 1/2 cups cassava flour 2 tbsp Virgin Coconut Oil + more for cooking Pinch of salt Directions: Boil sweet potatoes and let them chill by adding them to a bowl of ice. Peel, then add the sweet potatoes to a bowl and mash them up. Add in coconut oil, slowly stir in cassava flour, and mix until well-combined. I use my hands to mix it all up. Next, using your hands, form 5-6 dough balls. I used a tortilla press but you can also use a rolling pin. Dust your working table with some flour and roll out each tortilla with a rolling pin (they should be roughly 1/4 inch thick as shown in the video). Try not to make them too thin or too thick. Add coconut oil to a pan and place the tortillas in it. Cook over medium-high heat for 1 minute on each side. *Sub for all-purpose flour if cassava flour is not available. Sweet Potato Burrito Bowls! Why wait in line at Chipotle every day to spend TRIPLE on a meal when you can make this higher protein, lower calorie, nutrient packed burrito bowl? I ran the numbers…not including my seasoning blend that I got at Costco (so a LOT of seasoning for $7), this only set me back $3.75 per serve! Air fry or bake your sweet potato cubes in taco seasoning. It took a good 20-25 minutes for 1/2 inch cubes to cook through…but I put a huge batch in my air frier. Use the same seasoning on your lean ground beef (93/7!) and canned black beans. Cook the beef well done, simmer the beans on low heat with a 1/4 cup of water. Topped as shown this meal is 660 calories, 55 G Carbs, 28 G fat, and 50 G protein. Need to drop the calories further? I used 167 grams of cooked sweet potato, 3/4 serving of low fat Sargento Mexican blend and 1.5 reduced fat sour cream. Dial back on those and maybe a little less avocado (I had 100 calories worth on this plate) and you’ll be good to go.
