Cook with me as I connect with my Japanese heritage! Week 2: Today we’re making namasu! Namasu is a Japanese dish with thinkly sliced, lightly pickled vegetables. A popular version is carrot and daikon. You can make it with other kinds of vegetables too. I like this dish because of the sweet and tangy flavor. I also love the crunch! The marinade is very simple and only uses three ingredients: rice vinegar, sugar and salt. This is a dish that would typically be made for Japanese New Year for osechi ryori. I had bought my daikon to make it during our New Year celebration, but I forgot to make it… oops! What I learned: 🔪I need to improve my chopping skills, I’d like to be able to cut the daikon and carrot a little bit smaller 🥕The dish should have more daikon that carrot, otherwise the carrot color will take over and it won’t hav a nice balanced look 😬 a different recipe said to not squeeze too hard when you getting the excess moisture out - I definitely squeezed super hard 😅 next time it’ll be easier! For the sauce: 1 whole onion, 4 big cloves of garlic, steak/thinkly cut beef, 8-10 tablespoons spoons of extra virgin olive oil, pinch of salt salt, cut up small white mushrooms (optional) I forgot to add them, 8-10 cherry tomatoes, tomato basil sauce 3/4 of the jar, 1-2 pinch of honey powder, a bit of Italian seasoning, 1-2 tablespoons of soy sauce. Cook the sauce for 15-20ish min but keep an eye on it until the cherry tomatoes are well mixed in. I eye ball everything.

CREAMY STEAK 🥩& MUSHROOM 🍄 Serve with rice, mashed potatoes or in a pot pie 🥧 INGREDIENTS - 500g Thinkly Sliced Steak Of Your Choice - 15g Butter - Half An Onion Sliced - 1 Teaspoon Garlic - 1/2 Teaspoon Coriander Seeds - 1/2 Teaspoon Chilli Flakes - 1 Sprig Rosemary - 1 Punnet Sliced Mushrooms - 2 Tablespoons Flour - 2 Cups Beef Stock - 250ml Cream - 1/2 Teaspoon Salt - 1/2 Teaspoon Pepper - 1 Tablespoon Worcestershire - 1/2 Teaspoon mustard METHOD - Sear the steak slices. - Add Butter, Onions, garlic, coriander seeds, chilli flakes and rosemary. - Add in mushroom and allow to sauté. - Add in flour and mix. Add in the stock one up at a time. - Add in the fresh cream, season with salt, pepper, 1 Tablespoon Worcestershire & 1/2 Teaspoon mustard and allow to simmer. - Add in the steak slices. - Garnish with fresh parsley.

3 DAY C L E A N S E LEEK, LEMON + CANNELINI BEAN STEW serves 4 400g cannellini bean 2 leeks thinkly sices 2 garlic cloves chopped 1 lemon squeezed 300g spinach 400ml bone broth - I used @boroughbrothcompany 1 bunch of basil 1 bunch of parsley 1 jar of artichokes Sweat down the leeks and garlic. Add the cannellini beans and bone broth and simmer for 10 minutes. Add the spinach, herbs, artichokes and lemon. Season to taste. I had this with a piece of @seedful bread. The base of this is a bone broth, which is soothing for the gut, lots of lovely collagen, this helps to strength the gut lining AND reduce inflammation. Leeks are a wonderful prebiotic a.k.a food for your gut bacteria. Artichokes contain cynarin, this is the main component of which acts on the body by helping to eliminate toxins. They are also very high in fibre whihc helps to keep your regular and the intestines healthy.
