I know it’s not January anymore, but I fell off a cliff and I couldn’t post this video in time and I’ve got a concussion so I can’t redo it. Please forgive me. Caramelised leek and miso risotto:) 500g Leaks, sliced 6 cloves of garlic, finely minced 200g Risotto rice 1 Lemon 1 tbsp black pepper One bunch Chives 1 chicken or veg stock cube 150ml white wine 1 tbsp miso paste 3 tbsp double cream 1 liter hot water  3 tbsp butter  Heat a big glug of oil in a deep pan. Add your sliced leeks with a hefty pinch of salt and cook them on medium heat until they’re soft and caramelised—about 10 minutes. Stir occasionally to avoid any burning, then toss in your garlic.  Add in the risotto rice and toast it for 2 minutes. Pouring your white wine and allow to reduce slightly. Pop in your stock cube, miso paste, and 200ml of hot water. Stir until the stock is dissolved and the miso is mixed through. Gradually add the rest of the hot water, one ladle at a time, stirring constantly until the risotto is creamy and the rice has a slight bite. 
Stir in your butter, double cream, and a generous crack of black pepper. Squeeze in the lemon juice and add the zest for that zingy freshness. Toss in most of the chives, saving a little for garnish. 
Pile your risotto into bowls, sprinkle with the remaining chives, and maybe an extra grind of black pepper

I was a total mushroom hater before I went vegan. I blame it on not knowing how to cook them, or not knowing TO cook them (because they’re so much better cooked imho). Mushroom risotto is one of my favorite easy meals to cook. It’s thick, creamy, savory, and so full of flavor. It’s also really really easy to make. You can add a cup of vegan white wine before adding the broth (and let it cook off for a minute or two), but I decided not to this time. And hey, if you don’t like peas, just don’t add them! I had a recipe from a year or two ago when someone said it was disgusting before they ever tried it simply because I put raisins in it. I told them to leave the raisins out and they were just rude back to me... 😳 Anyway, this creamy mushroom risotto is One of my faves when I’m sitting in my freezing office and craving it. Serves 3 ▪️270g baby tomatoes ▪️1 shallot ▪️2 large garlic cloves ▪️1 tsp sage ▪️2 tbsp tomato puree ▪️1 cup arborio rice (210g) ▪️800ml veg stock 1️⃣Firstly, heat a large non stick pan with oil adding in the whole tomatoes and fry for 2-3 minute until the start to soften 2️⃣Press the tomatoes to extract the juice before adding the diced shallot + garlic + sage + tomato puree + rice and fry together for 2 minutes 3️⃣Add the stock and reduce to a low simmer for 20-25 minutes until desired consistency (make sure to stir every 5 minutes or so) 4️⃣Finally, once the risotto rice has absorbed the liquid, sprinkle over cracked pepper and serve FAQ’s ➡️Can I add extra protein to this? Absolutely, you could add in prawns, chicken or tofu if you wish. I would just fry them separately and stir through at the end ➡️What can I do with leftovers? Mushrooms are seared until browned, then flavored with garlic, fresh thyme, and a savory powerhouse of creamed miso butter (white miso + vegan butter). The shrooms are then folded into a creamy, velvety risotto made with a few simple ingredients like sauteed leeks and garlic, short or medium-grain white rice, and good-quality vegetable broth. ⭐️ Tips for great risotto ⭐️ - Contrary to popular belief, do *not* stir risotto constantly. This can make it gluey. Instead, stir about every 30 seconds. - Make sure your broth is hot/warm and ladle it in gradually. Once the broth is mostly absorbed, add more. - For the best texture, you gotta cook your vegetables in a separate pot from the risotto, then stir in at the end. No soggy mushrooms please. - Avoid overcooking risotto. It should be creamy and somewhat soft but not mushy. BUTTERNUT SQUASH + SAGE RISOTTO 🍂 Butternut squash is bang in season right now, so when better to make a comforting bowl of creamy squash risotto - the ultimate winter warmer PERFECT for the colder weather. The dish is pretty simple, uses only a handful of plant-based ingredients, and helps reduce your food waste too. I’ve written the full written recipe down below - so let me know if you give it a go 👨🏻‍🍳 And let me know what other vegetables fill you with uncertainty in the comments below 👇 INGREDIENTS (serves 4) 1 butternut squash (+ seeds!) 1 brown onion 1 head of garlic 2 large knobs of (plant) butter 3tbsp olive oil 300g risotto rice 1 large glass of white wine (or mix 1tbsp white wine / cider vinegar + glass of water) 1.5 litres vegetable stock 6tbsp nutrtional yeast Handful of sage leaves Salt Pepper METHOD 1. Halve & deseed the squash, then season with salt, pepper & 1tbsp of olive oil. 2. Chop a bulb of garlic in half, season with salt & a splash of oil. Place in the squash + roast with pumpkin at 180 for 40 minutes. 3. Pat the squash seeds dry, season with salt, pepper & a splash of oil. Toast for 15-20 minutes until crunchy, then set aside. 4. Finely dice the onion & fry on a medium-low heat with 1 large knob of butter, 2tbsp of olive oil & a large pinch of salt. 5. Once softened (10-15 minutes), add risotto rice & toast until shimmering (3-5 mins). 6. Get your vegetable stock simmering in a separate pot. 7. Add a large glass of white wine to the risotto & allow to cook off. 8. Add a ladle of stock, stir well & wait until completely absorbed. Repeat & continue adding adding & stirring the stock for 25-30 minutes until the rice is al dente. 9. Spoon out the roasted squash & garlic into a blender with a ladle of veg stock, salt + pepper. Blitz until smooth. 10. Add the squash to the rice with a handful of chopped sage, a large knob of butter & 4tbsp nooch. Beat well until creamy & silky. 11. Fry some sage leaves in oil until crispy. 12. Time to serve - risotto into wide bowls, tap on surface to settle. No wonder they call it 🪄PURE SAUCERY🪄 Save the recipe below👇🏽 Ingredients (serves 3-4) 🔸 750-800ml vegetable stock 🔸 35g + 1tbsp salted butter 🔸 2tbsp EV olive oil 🔸 165g (chopped) shiitake mushrooms 🔸 120g (chopped) oyster mushrooms 🔸 Salt & pepper (to taste) 🔸 1 brown onion (diced) 🔸 2tsp minced garlic 🔸 4tbsp @lkkeurope premium oyster sauce (or the mushroom vegetarian version) 🔸 30g samphire (chopped) 🔸 250g arborio rice 🔸 1tsp dried thyme 🔸 40g grated parmesan 🔸 1tbsp chives (chopped) Method: 1️⃣ Heat the vegetable stock & keep it warm throughout the process 2️⃣ In a large pan, fry chopped mushrooms in 1tbsp butter, 1tbsp EV olive oil, salt & pepper on high heat till browned (optional: remove & save some for topping) 3️⃣ Reduce to low-med heat, add onions, garlic, 1tbsp EV olive oil, samphire and the premium oyster sauce, (substitute this for the mushroom version for vegetarians) 4️⃣ Fry till the onions till they begin turning translucent, then add arborio rice, thyme & mix/cook for a couple more mins 5️⃣ Cook the risotto by adding 1 ladle (1/2cup) of stock at one time, stirring continuously until that liquid has absorbed, then repeat till the rice is cooked (but still has a bite to it) *this requires time (about 20mins) & patience but is worth it!! 6️⃣ Once cooked, turn off the heat & stir in butter, parmesan & chives 7️⃣ Top with more chives & mushrooms (optional) & enjoy!
