Ingredients: For the marination: * 1 cup whisked yogurt * 1.5 tbsp ginger garlic paste * Salt to taste (I put 1 tbsp) * 1 tbsp red chilli powder * 2 tbsp biryani masala * 1 cup crispy brown onions * 500g vegetables - 1 medium cauliflower, cut in florets - 2 medium carrots, diced in chunks - 1/4 cup green peas - 1/2 cup green beans For the rice: * 500g biryani rice * 3 litres water * Salt - enough to make the water taste saline * 1 bay leaf * 1/2 tsp shah jeera * 1 star anise * 2 green cardamom * 2 cloves * 1 inch cinnamon stick * 1 black cardamom For layering the biryani: * 1/4 cup saffron milk * 1 tbsp ghee * 2 tbsp kewra water * A handful of chopped coriander leaves * A handful of chopped mint leaves * 2 tbsp birista oil #slurrpitup #vegbiryani #vegbiryanirecipe #vegbiryani😍 #vegetablebiryani

ONE POT VEG BIRYANI (Version 2.0) BY MASTERCHEFMOM - You are sure to get loads of compliments👍🏻 Save, Share and try 👌🏻😍 Ingredients for Biryani Masala To Grind them thick without adding water: 2 Onion 6 garlic cloves 1” ginger 2 green chillies handful of mint and coriander leaves To a cooker: Over low flame, Add 2 tsp ghee 2 tsp oil 2 bay leaf 1” cinnamon stick 2 cloves Mix well Add the ground Biryani Masala,salt, 1/2 tsp chilli powder,1/2 tsp garam masala powder or biryani masala powder Cook them over low flame for a few seconds Add vegetables ( 1 carrot, 10 beans, 1 potato, 1/3 cup peas) Squeeze juice of 1/2 lemon. Fry the vegetables for 2-3 minutes . Add 1 cup washed rice, water ( 1:1 or 1:1.5) depending upon the rice variety you are using. If using packet basmati rice use 1:3/4 water. Pressure cook for 1-2 whistles and switch off. Once the pressure releases, open the cooker, add ghee roasted cashews if you like and garnish with more coriander/mint leaves. That’s it! veg biryani recipe: 1. peel and cut 300gm or 1 large russet potato into small cubes. take 120gm green beans and cut them into 2 inch pieces, take 1/4th cup peas, 1 cup eggplant cut into small cubes, 1/2 cup carrots cut into thin strips and 300gm cauliflower. 2. fry these vegetables individually until they turn slightly golden brown. keep them aside. 3. fry 2-3 large onions finely sliced until their golden brown and keep aside. (please look up ‘birista’ recipe on youtube if you want to understand how to properly do this) 3. in a pot, warm up 1/4 th cup oil leftover from frying the veggies. add 1 tsp shahzeera, 2 cloves, 3 cardomom pods, 1 small stick of cinnamon and a small bay leaf. saute for 30 seconds. 4. Add 2 tbsp ginger garlic paste, 3 chopped green chillies and sauté for a minute. add 3 medium sized tomatoes cut into small chunks. 5. add salt to taste, 1/2 tsp turmeric powder, 1.5 tsp red chillies powder and mix well. cook for 5 minutes or until the tomatoes are soft. 6. Then, add around 3/4th cup plain yogurt and mix. add 1 cup fried onions (save some for garnish). cook on a medium- low flame until everything is combined and the oil separates. then add 1 tsp lemon juice, 1.5 tsp garam masala powder and handful of chopped mint and cilantro about 1/2 cup each. 7. Then, add the fried vegetables into the pot and mix everything well. {transfer this to a large pot that we are going to make our biryani in} 8. Soak 500gm basmati rice for around 20-30 minutes. 9. In a separate pot, add 1 liter water and add 1 tsp shahzeera, 2 cloves, 3 cardomom pods, 1 small stick of cinnamon, 1 tsp oil, few drops of lemon and also drop the lemon peel inside. it makes the rice fluffy and white. 10. when the water comes to a rolling boil, add the rice and cook for 4 minutes. strain it and add the rice on top of our mixed vegetables. add 2 tsp ghee, a pinch of egg yellow food color OR pinch of saffron strands mixed with a tbsp of milk, fried onions that we kept aside to garnish, and some chopped cilantro and mint. and seal the pot with aluminum foil. cook on high for 7-10 minutes and then cook on low for 30 minutes. and it’s ready! #vegbiryani #biryani
