Mix dry In a bowl, combine flour, sugar, salt, milk powder, and yeast. 2. Hydrate Add milk and vinegar. Knead 3–4 minutes to form a rough dough. 3. Enrich Add butter and oil. Continue kneading until smooth and elastic, 10–12 minutes total. (By hand or mixer — mixer is faster.) 4. First proof Place dough in a lightly oiled bowl, cover with cling wrap. Proof 1½ hours, until doubled. 5. Shape Degas, divide into 8 equal balls (≈82 g each). Place close together on a lined tray. 6. Second proof Cover with a cloth and proof 30 minutes, until doubled. 7. Bake Brush with milk + melted butter wash. Bake at 170°C for ~20 minutes or until golden brown. ⸻ To Serve Slice, load generously with butter, let it melt and ooze. Let the dough rise until it doubles in size (~1-2 hours) Cut into 8 equal pieces and shape into balls. Press down on buns to flatten them out slightly. Pillowy soft MILK BREAD BUNS Why just drink your milk when you can eat it in the form of bread too 😋 These irresistible milk bread buns are one of my favorite ways of incorporating dairy milk into my baking. They’re softer, richer, and more flavorful than regular breads, with a subtle hint of sweetness from the condensed milk. Recipe makes 16 buns (but you’ll probably need double) @gonnaneedmilk #gonnaneedmilk #ad Main Dough Ingredients: 530g bread flour 240g whole milk 50g heavy cream 60g sweetened condensed milk 20g milk powder 1 large egg 6g instant yeast 8g salt 50g unsalted butter Tangzhong: 20g bread flour 100g whole milk 1. Make the tangzhong. Place all tangzhong ingredients into a small pot. Whisk until no lumps remain. Stir continuously over medium heat until the mixture resembles mashed potatoes. Remove from heat and set aside to cool for 5-10mins 2. To the bowl of a stand mixer, add the tangzhong and all other ingredients except for butter. Using the dough hook attachment, mix for 8-10 mins. Then add the butter and continue kneading for 8-10 mins or until a window pane is achieved. Dough should be tacky but manageable. 3. Shape the dough into a ball, place it into a large bowl, cover, and let rise for 1.5-2hrs or until it’s doubled in size. Meanwhile lightly grease a 11” square pan 4. Punch dough to deflate and divide it into 16 equal sections 5. Shape each section into a ball and place it into the pan. You should have 4 rows of 4 6. Cover and let rise for 30mins-1hr or until almost doubled in size 7. Meanwhile, preheat the oven to 350F. Optional: dust the surface of the buns with some bread flour right before baking. Sourdough optional <3 Ingredients: Makes 15 XL rolls or 24 regular rolls For the dough: 690g all purpose flour 245g water (warm if your house is cold) 300g sourdough starter or discard 18g instant yeast 2 large eggs 105g honey (or sugar) 56g salted butter, softened 2.5 tsp salt If you’re *not* using sourdough starter/discard: Use 840g flour and 395g water. Optional egg wash: - 1 egg - about 1 TBSP milk or cream (cream w/ a splash of water works best IMO) —- Instructions 1. To make the dough: Combine all dough ingredients except for the butter in the bowl of a stand mixer. Mix on low speed for a minute or two until the flour is all absorbed, then mix on high or medium high speed for about 10 minutes until you have a soft, smooth dough that is close to passing the windowpane test. At this point you can add the softened butter and mix for a few more minutes until all combined. The dough should be smooth, strong, and slightly shiny. Shape it into a ball in the mixing bowl and cover. Let rise until it’s nearly doubled in size, about 1 to 2 hours OR more if your house is cold. 2. To shape the buns: Divide dough into 15-24 rolls depending on the size you want. These were each about 105 grams (they were huge lol) and it made 15. For a more standard size, do ~65g each (this will make 24 rolls). Shape each roll. To smooth it out, cup your hands and pull the dough ball towards you to tighten the outer layer & create a smooth, round ball. Place buns on a parchment-lined baking sheet. Cover & let rise until noticeably puffy, about an hour. Put in oven with the light on to help them rise if your house is cold. 3. Toward the end of rising, preheat oven to 375F & make an egg wash to add an extra golden shine on top. Mix one egg w/ a splash of milk or cream until you have a smooth liquid, then brush over the buns before baking. Now sprinkle with coarse sea salt. 4. Bake: for small buns, bake for about 15-18 minutes, until golden. They were simply perfect 😋 Tangzhong: 20 g bread flour 40 ml milk 40 ml water Main Dough: 320 g bread flour 40 g sugar 8 g instant yeast 5 g salt 1 egg 10 g honey 100 ml milk (start low, add more if needed) 50 g unsalted butter softened 1 egg ( for egg wash) Method: To make the Tangzhong, add the milk, water and flour to a small pot. Heat up over low heat while stirring. Once the mixture is thick. Transfer to a bowl and cool at room temperature. Add all the ingredients with the tangzhong we made earlier to a stand mixer except the butter. Kneed for 10 minutes on low speed until the dough comes together. Add the butter and kneed for 10-15 minutes until the dough is smooth, you can test it by *windowpane test. Place the dough in a lightly oiled bowl, let it proof for 60-90 minutes until it doubled in size. Punch down the dough, Divide it into 6 equal portions. Shape each portion into a ball. Cover and let rise in a warm place for 45 minutes Brush with the egg wash.
