Add flour in 1/2 cup at a time. Dough should clean the sides of your bowl and not be overly sticky. Knead until dough passes windowpane test. Shape into a ball and put into a greased bowl. Let the dough rise until it doubles in size (~1-2 hours) Cut into 8 equal pieces and shape into balls. Press down on buns to flatten them out slightly. Pillowy soft MILK BREAD BUNS Why just drink your milk when you can eat it in the form of bread too 😋 These irresistible milk bread buns are one of my favorite ways of incorporating dairy milk into my baking. They’re softer, richer, and more flavorful than regular breads, with a subtle hint of sweetness from the condensed milk. Recipe makes 16 buns (but you’ll probably need double) @gonnaneedmilk #gonnaneedmilk #ad Main Dough Ingredients: 530g bread flour 240g whole milk 50g heavy cream 60g sweetened condensed milk 20g milk powder 1 large egg 6g instant yeast 8g salt 50g unsalted butter Tangzhong: 20g bread flour 100g whole milk 1. Make the tangzhong. Place all tangzhong ingredients into a small pot. Whisk until no lumps remain. Stir continuously over medium heat until the mixture resembles mashed potatoes. Remove from heat and set aside to cool for 5-10mins 2. To the bowl of a stand mixer, add the tangzhong and all other ingredients except for butter. Using the dough hook attachment, mix for 8-10 mins. Then add the butter and continue kneading for 8-10 mins or until a window pane is achieved. Dough should be tacky but manageable. 3. Shape the dough into a ball, place it into a large bowl, cover, and let rise for 1.5-2hrs or until it’s doubled in size. Meanwhile lightly grease a 11” square pan 4. Punch dough to deflate and divide it into 16 equal sections 5. Shape each section into a ball and place it into the pan. You should have 4 rows of 4 6. Cover and let rise for 30mins-1hr or until almost doubled in size 7. Meanwhile, preheat the oven to 350F. Optional: dust the surface of the buns with some bread flour right before baking. Dough: 2 eggs 35g sugar 580g bread flour (I used @kingarthurbaking) 12g kosher salt 35g softened unsalted butter 100g whole milk 6g instant yeast Tangzhong: 120g whole milk 120g water 40g bread flour +4 mozzarella sticks cut into 3 sections (12 total) 1. Make the tangzhong. Whisk all tangzhong ingredients in a small pot until no lumps remain. Then stir continuously over medium heat until the mixture resembles mashed potatoes. Remove from heat and let cool for 5 mins 2. In the bowl of a stand mixer, add the tangzhong and all other dough ingredients except for butter. Using the dough hook attachment, mix for 5 mins until the dough comes together. Add the butter and mix for 8-10 mins or until a rough window pane is achieved 3. Shape the dough into a ball, place into a bowl, cover, and let rise for 1.5-2hrs or until almost doubled in size 4. Punch dough to deflate and divide into 12 equal sections. Form into balls. Cover and let rest for 10 mins. Meanwhile lightly grease a 9”x13” pan 5. Doing one at a time, roll the dough into a long oval ~9” long. Cut slits lengthwise as shown in the video, making sure to stop 3/4 of the way. Place the cheese at the end with no slits and roll into a log. Place into the pan. Repeat with remaining dough and cheese 6. Cover and let rise for ~30mins or until noticeably puffy. Preheat oven to 350F 7. Lightly brush with a little milk before baking. Bake for 25-30mins or until the top is golden 8. These Soft Milk Buns made with tangzhong are great for breakfast, snacks or may be used as burger buns! Below is the recipe. I used a 9 x 11” rectangular pan, lined with parchment paper. Tangzhong: 175g milk
42g bread flour 

In a sauce pan, mix all the ingredients together and slowly cook on low heat until a soft paste forms. Cover with cling and allow to cool completely before using. You can keep this overnight too if you wish but thaw to room temperature first before using. Main dough: 240g Bread Flour (13% protein) 150g AP flour
20g fine whole meal flour 50g castor sugar 3/4 tsp salt 
4g instant yeast 
98-112g full cream milk + 1 egg (100g + egg = 155g)
40g softened butter
1 tsp vinegar Instructions: 1.In the stand mixer bowl, place all dry ingredients and mix with a whisk until combined.
Add in the milk, egg and all the tangzhong and stir to mix before adding to the dry mixture.
Knead until a smooth dough forms then add in the softened butter and continue to knead to window pane. Add in the vinegar and knead until it is absorbed by the dough.
2.Allow to proof, covered, until doubled in size. Transfer to lightly floured table top and knead gently to de-gas. Divide into 12 equal pieces and roll into balls. Rest for 20 minutes.
3.Shape each portion as desired and place into prepared pan. Proof until doubled again, then egg wash the top.
4.Bake in preheated oven at 170C for 25 minutes or until golden. Tent if the top gets too dark.
