Continue kneading until smooth and elastic, 10–12 minutes total. (By hand or mixer — mixer is faster.) 4. First proof Place dough in a lightly oiled bowl, cover with cling wrap. Proof 1½ hours, until doubled. 5. Shape Degas, divide into 8 equal balls (≈82 g each). Place close together on a lined tray. 6. Second proof Cover with a cloth and proof 30 minutes, until doubled. 7. Summer is here! Meaning more burgers and barbecue for dinner! I made these soft and delicious burger buns for dinner last night. They were simply perfect 😋 Tangzhong: 20 g bread flour 40 ml milk 40 ml water Main Dough: 320 g bread flour 40 g sugar 8 g instant yeast 5 g salt 1 egg 10 g honey 100 ml milk (start low, add more if needed) 50 g unsalted butter softened 1 egg ( for egg wash) Method: To make the Tangzhong, add the milk, water and flour to a small pot. Heat up over low heat while stirring. Once the mixture is thick. Transfer to a bowl and cool at room temperature. Add all the ingredients with the tangzhong we made earlier to a stand mixer except the butter. Kneed for 10 minutes on low speed until the dough comes together. Add the butter and kneed for 10-15 minutes until the dough is smooth, you can test it by *windowpane test. Place the dough in a lightly oiled bowl, let it proof for 60-90 minutes until it doubled in size. Punch down the dough, Divide it into 6 equal portions. Shape each portion into a ball. Cover and let rise in a warm place for 45 minutes Brush with the egg wash. Bake at 350 F/ 180 C for 20 minutes. خبز بريوش للبرغر 🤗 اذا جربتو هالوصفه مستحيل تشتروا بريوش 🍔 من الماركت قوامه مثل القطن!ولاغلطة 👌 نحضر التانغزونغ: 20 غرام دقيق الخبز 40 مل حليب 40 مل ماء للعجينة الرئيسية نحتاج: 320 غرام دقيق الخبز 40 غرام سكر 8 غرام خميرة فورية 5 غرام ملح ١ بيض 10 غرام عسل 100 مل حليب كامل الدسم ( إضافته تدرجيا ) 50 غرام زبدة غير مملحة بدرجة حرارة الغرفة لتحضير التانغزونغ :في قدر صغير نضع الحليب والطحين والماء . نضع القدر على نار هادئة ونستمر بالتحريك حتى يتكثف المزيج. نضعه جانبًا في صحن اخر حتى يبرد بدرجة حرارة الغرفة. نضع جميع مكونات العجينة الرئيسية عدا الزبدة مع التانغزونغ بوعاء الخلاط الكهربائي نخلط على سرعة منخفضة لمدة 10 دقائق. نضيف الزبدة ونعجنها 10-15 دقيقة حتى يصبح سطح العجينة املس. ممكن نتأكد من ان العجينة جاهزة من اختبار windowpane test. ننقل العجينة الى وعاء مدهون ونتركها حتى يتضاعف حجمها من 60-90 دقيقة. بعد ان تضاعف حجم العجينة، نقسمها إلى 6 كرات نشكل كل جزء في كرة. اتركها تخمر لمدة 45 دقيقة نمسح وجه الخبز بالبيض. يخبز في فرن حرارتة 350 فهرنهايت/180 درجة مئوية لمدة 20 دقيقة. #burgerbuns #briochebun #بريوش #خبز

They’re softer, richer, and more flavorful than regular breads, with a subtle hint of sweetness from the condensed milk. Recipe makes 16 buns (but you’ll probably need double) @gonnaneedmilk #gonnaneedmilk #ad Main Dough Ingredients: 530g bread flour 240g whole milk 50g heavy cream 60g sweetened condensed milk 20g milk powder 1 large egg 6g instant yeast 8g salt 50g unsalted butter Tangzhong: 20g bread flour 100g whole milk 1. Make the tangzhong. Place all tangzhong ingredients into a small pot. Whisk until no lumps remain. Stir continuously over medium heat until the mixture resembles mashed potatoes. Remove from heat and set aside to cool for 5-10mins 2. To the bowl of a stand mixer, add the tangzhong and all other ingredients except for butter. Using the dough hook attachment, mix for 8-10 mins. Then add the butter and continue kneading for 8-10 mins or until a window pane is achieved. Dough should be tacky but manageable. 3. Shape the dough into a ball, place it into a large bowl, cover, and let rise for 1.5-2hrs or until it’s doubled in size. Meanwhile lightly grease a 11” square pan 4. Punch dough to deflate and divide it into 16 equal sections 5. Shape each section into a ball and place it into the pan. You should have 4 rows of 4 6. Cover and let rise for 30mins-1hr or until almost doubled in size 7. Meanwhile, preheat the oven to 350F. Optional: dust the surface of the buns with some bread flour right before baking. Brioche Buns As promised, here’s the recipe ❤️ I have tried so many methods including a tangzhong method, potato bread…. For me this makes the best burger buns! This makes really good hot dog buns, and a great sweet dough recipe. Brioche bread buns (adapted bbcfood recipe - makes 6, double if you want more ) By @sugar_n_ice_by_rae 120 ml warm water 1 tsp yeast 2 Tablespoons warm milk 1 Tablespoons brown sugar (increase to 2 for sweet dough) Mix the above in a jug and allow the mixture to double and become frothy... at least 10 mins. 220g white bread flour 1/2 tsp salt 30g butter 1 egg (plus 1 more to brush the buns) To your mixer/bowl add in the flour and salt. Rub in the butter to resemble crumbs or use the paddle attachment in the mixer to do this for you. Pour in the yeast mix and the egg into the flour and form into a dough. This dough is a wet dough so it would be a lot easier to knead in a mixer. You can add in up to a 1/2 cup more of flour if the dough is too wet to work with, but add in 1 tablespoon at a time. But Knead for at least 10 mins in the mixer, until the dough comes away from the sides easily. Place the dough into an oiled dish and cover, keep in a warm place and allow to rise to double its size... around 45 minutes. When doubled, deflate lightly, separate into 5 or 6 depending on the size and form into buns, flattening the ball a little to make discs. Prove for another 20 mins Brush with beaten egg and sesame seeds if you prefer, and bake at 180 degrees for about 20 mins. Brush with butter/ghee as soon as they’re out of the oven. Tip- knock the base of the bread, if it sounds hollow they’re done. Top tips - use bread flour for this - It’s a wet dough, a little tricky to work with so let your mixer do most of the kneading. - Knead the dough well to form a good dough - at least 10-15 mins in the mixer - you can make the dough and refrigerate overnight. Let it come to room temp, shape and allow to rise a little and then bake.
