MEXICAN STREET CORN SALAD 🌽🌶 A delicious side dish for the summer or just a topping for your tacos. 💃 ✨This is my healthy version while substituting the traditional mayonnaise for nonfat Greek yogurt and it’s always amazing. 🙌🏼 Delicious and easy to make! You’ve just got to try! 😋 RECIPE⬇️ Ingredients: •4 cups corn kernels •1-2 Tbsp oil, extra virgin olive is great •1/2 cup chopped cilantro •1/4 cup diced seeded jalapeños •1/2 cup diced red onions •2/3 cup crumbled Cotija cheese (or you can use parmesan) •4 Tbsp nonfat plain Greek yogurt •4 Tbsp fresh lime juice, about 2 limes •1/2 tsp ground cumin •1/2 tsp ground paprika •1/4 tsp salt •1/4 tsp chili powder Directions: 1️⃣Sauté corn on a skillet with oil until charred. Remove and set aside to cool. 2️⃣Chopped cilantro, seed and dice jalapeño, dice onion, and crumble cheese. Add to corn. 3️⃣Prepare your dressing-combine yogurt with spices and lemon juice and whisk together. 4️⃣Toss ingredients and dressing together. Cover and chill in refrigerator for 1-2 hours. ➡️Sprinkle chili powder on top layer once ready to serve. Salad Series: Episode 7- Cucumber Corn salad Welcome to yet another episode of my salad series. Today we’re making this yummy Corn salad. You’ll need; * Sweet corn ( I used fresh boiled but you can also use canned) * 1 large cucumber * 2 tomatoes * Red bell pepper * onion * fresh coriander * 2 green chillies (optional) Dressing: * Juice of 1 lime/lemon (or vinegar if that’s what you have) * 1 tsp salt (adjust to taste) * pinch of black pepper *1 tsp Ajinomoto (MSG) * 3 tbsp olive oil (optional) * In a bowl Combine corn, cucumber, tomato, bell pepper, onion, coriander, and chili in a bowl. * Add in the lime juice, salt, pepper, Ajinomoto and olive oil. * Mix till well combined * let it sit for 10–15 minutes before serving to let flavors marry #cornsalsa #cirnsalad #cucumbercornsalad #saladrecipes #saladideas

Mexican Corn Salad🌽 Ingredients: Corn • 6 cups (30oz) corn, frozen • 1 tbsp butter •1 tbsp olive oil •Salt, to taste •1 tsp chili powder •1 tsp paprika Dressing: • ⅓ cup sour cream •¼ cup mayo • Juice of half a lime •Tajín to taste •Salt and pepper to taste Toppings: •½ cup crumbled cotija cheese • 1/2 cup Parmesan cheese •⅓ cup chopped red onion •½ cup chopped cilantro •1 jalapeño, diced Instructions 1. Heat a large skillet or cast iron pan over medium-high heat. Add butter, olive oil, then corn. Let it cook for 2–3 minutes so it chars. Stir and continue cooking until golden and a little smoky. Season with salt, chili powder and paprika. 2. In a large bowl, add the corn, red onion, jalapeño, cilantro, sour cream, mayo, cotija cheese, Parmesan cheese, lime juice, salt and pepper. Taste and adjust seasonings as needed. As tajin to taste and enjoy!
