Kabocha squash is super low calorie and it hits the spot of a starchy side dish (like potatoes). 270 grams of cooked kabocha squash has only 100 calories versus 100 grams of regular potato for the same amount of calories. The taste is somewhere beteeen a sweet potato and a regular potato. I absolutely love it. PRO TIP: stick it in the oven whole for 15 minutes at 400 F. Then cut in half, scrape out the seeds, cut into pieces and roast with a drizzle of oil and flaky salt for another 10-15 minutes. It’s a super quick and easy side dish you must try! Roasted Japanese Pumpkin Ingredients: 1 medium Japanese Pumpkin ~3 lbs Oil 2 Tbsps Salt to taste Steps: Wash and scrub pumpkin. Dry with a towel. Cut pumpkin in half. Remove seeds. Carefully slice pumpkin, about 1-inch thick. Place pumpkin slices on a baking sheet. Drizzle oil and add salt to taste. Mix well. Place pumpkin slices in a single layer, avoid touching. Airfry for 10 - 12 minutes at 400 F, or till golden brown and fork tender. Serve immediately as a side dish or a snack. Enjoy! Notes: In this video, I only used about 1/3 of the pumpkin, which about 1 lb. You can keep it simple and season with only salt or add your favorite seasoning such as garlic powder, onion powder, paprika, chili powder, fresh herbs, black or white pepper. You can freeze the leftover roasted pumpkin for up to 3 months. Oil-free, flavorful, crunchy on the outside and soft on the inside 😋 Save 📌 this recipe! You have to try it!! 📝 1 kabocha squash 1 tbsp minced garlic 2 tbsp soy sauce 2 tbsp nutritional yeast 2 tbsp sriracha 2 tbsp dried dill 2 tbsp water 👩🍳 • Mix all marinade ingredients together • Place kabocha pieces in container, put the marinade over, close the lid, and give it a good shake (or use your hands as I did in the video) • Lay kabocha on parchment paper • Cook at 350 F (180 C) for 45 minutes or until slightly charred ENJOY and let me know what you think 😉 #santosharecipes
