Mini Chocolate Chip Cookies 🍪(Button-Size) Ingredients Butter & Sugars • Unsalted butter (cold, cubed) — 225 g • Dark brown sugar (packed) — 200 g • Caster sugar — 35 g Wet Ingredients • Vanilla bean paste / extract — 10 g • Full-fat plain yogurt — 30 g • Sweetened condensed milk — 15 g (1 tbsp) Dry Ingredients • All-purpose flour — 310 g • Cornflour — 7 g (1 tsp) • Baking powder — 3 g • Baking soda — 2 g (½ tsp) • Fine salt — 4 g (¾ tsp) • Instant coffee (optional) — 1 g (¼ tsp) Chocolate • Dark chocolate chips — 162 g • Milk chocolate chips — 162 g (Total chocolate: 324 g) ⸻ Method 1. Cream the cold cubed butter with the brown sugar and caster sugar until creamy. 2. Add yogurt, vanilla, and condensed milk. Mix well until combined. 3. Add all the dry ingredients together into the bowl (flour, cornflour, baking powder, baking soda, salt, and coffee). Mix just until combined. Do not overmix. 4. Fold in the chocolate chips. 5. Shape: • Either transfer to a piping bag and pipe small droplets, • Or roll into very small balls by hand (slightly larger than button size). 6. Freeze the shaped dough for a minimum of 4 hours. 7. Bake at 180°C for 10–12 minutes. 8. Let them cool on the tray before handling. In a bowl, combine the softened butter with brown and white sugars. Use an electric mixer to beat until creamy and light. Take your time with this step; it’s important for flavor. 2. Add the eggs and mix well. 3. Gradually add the sifted flour, cornstarch, vanilla, and baking powder. Mix gently until just combined. Avoid over-mixing; you want a smooth dough. 4. The dough will be soft and slightly sticky. If it’s too runny, add a little more flour. 5. Fold in the chocolate chips until evenly distributed. 6. Transfer the dough into a piping bag and pipe small dollops onto a baking sheet, leaving space between each cookie. 7. Preheat your oven to 170 degrees Celsius (340 degrees Fahrenheit). Bake the cookies for about 8 to 9 minutes, or until just the edges are golden brown. Tip: Cornstarch helps make the cookies softer. Use high-quality, softened butter for the best results. Butter that is too cold or too warm can affect mixing. You can substitute butter with margarine or vegetable oils, but it will change the flavor. These cookies can be stored in the freezer for several months. Basic Cookie Dough: •454 g salted butter (room temperature) •150 g white sugar •450 g light brown sugar •3 egg yolks + 3 whole eggs •1/2 tsp salt •2 Tbsp vanilla •875 g flour •80 g cornstarch •2 tsp baking soda •2 tsp baking powder •400gr chocolate chips •100gr nuts (opt) 🍵🍫For Matcha and Chocolate Cookies: Divide the dough into 2 bowls. Remove 60 g of flour from the recipe (815gr) substitute with •Chocolate: Add 30 g dark cocoa powder. •Matcha: Add 25–30 g matcha powder. 👩🏻‍🍳 Directions ; •Cream butter&sugars until smooth. •Add eggs one by one. •Mix in vanilla + salt. •Sift all dry ingredients and fold into dough. •Roll into 8 long logs (about 130g each). •Chill overnight ❄️ •Cut logs into 1 cm slices → roll into balls. •Pan with parchment, leave space (they spread!). •Bake 320°F / 160°C for 10–12 min.
