I’m a Dietitian and this is my go-to salad when I need something quick, easy and healthy for lunch! ✨Follow @nourish_naturally for more easy healthy recipes✨ This Lentil Salad requires absolutely no cooking at all and the delicious combination of fresh herbs, salad veggies, lentils, feta and lemon dressing will leave you feeling healthy, energised and satisfied. Recipe INGREDIENTS: 1 cucumber, finely diced 1 red onion, finely diced 8 cherry tomatoes, quartered 1 cup parsley, finely chopped 1 medium avocado, diced 400g (1 can) cooked brown lentils, drained and rinsed 100g feta, crumbled 3 Tbsp extra virgin olive oil Juice of 1 large lemon METHOD: Place all ingredients into a salad bowl and toss to combine.
