Crispy edges (a must!), naturally rich in fiber + potassium (a need!!). Most days I grab one from my freezer stash, warm it up, add nut butter, and bam— real food fuel! PS -The batter totally works for pancakes too. Just skip the oil. Check the blog for the instructions. WHAT YOU NEED: 2 large eggs, whisked (egg substitute on blog🙌) 1 1/4 cups gluten-free rolled oats or oat flour 1 small–medium ripe banana (or 1/2 cup mashed) 2 Tbsp refined avocado oil or refined coconut oil 2 tsp sugar 1 tsp baking powder 1/4 tsp kosher salt 5 Tbsp (1/4–1/3 cup) unsweetened almond milk Pinch of cinnamon, optional Butter or high-smoke oil (such as avocado oil), for cooking HOW TO MAKE IT: Add oats (or oat flour), eggs, banana, oil, sugar, baking powder, salt, cinnamon (if using), + almond milk to a high-speed blender and blend until mostly smooth; a little oat texture is fine. Let the batter rest 10 minutes to fully hydrate. Preheat and generously grease a waffle iron. Cook waffles until golden and steaming stops, about 3–5 minutes per waffle, leaving them in an extra 20–30 seconds for crisp edges (worth it!). ⭐️ TIP - Double the batter, cook, then freeze half for later. 👉 For the FULL RECIPE + substitutes, tap the link in our bio or comment RECIPE and we’ll DM it to you! 🔗 https://www.cottercrunch.com/gluten-free-banana-waffles/ #cottercrunch #glutenfreewaffles #glutenfreebreakfast #bananaoatwaffles
