CREAMY POTATOES AU GRATIN RECIPE A rich, comforting, and indulgent side dish! Ingredients: - 1 kg (2.2 lbs) potatoes (Yukon Gold or Russet) - 600 ml (2 ½ cups) heavy cream - 200 ml (¾ cup) milk - 3 garlic cloves - 150 g (1 ½ cups) grated Gruyère cheese - Salt & black pepper - Pinch of nutmeg (optional) - 15 g (1 tbsp) butter - Fresh thyme - Bay leaf - Butter for greasing the baking dish Instructions: 1. Préchauffer le four à 180. 2. Éplucher et laver les pommes de terre. Les couper en fines rondelles. 3. Frotter le fond d’un plat à gratin d’une gousse d’ail. 4. Mélanger le lait et la crème. Recouvrir le fond du mélange. 5. Déposer une couche de pommes de terre, recouvrir de crème / lait, saupoudrer de muscade, sel et poivre. Renouveler les étapes jusqu’à épuisement des pommes de terre. Potatoes au Gratin ✨ 3 lbs Yukon Gold or Russet potatoes, thinly sliced diced 1 small onion, finely chopped 6–8 garlic cloves, minced 1/2 cup dry white wine (optional) 3 cups half-and-half 1 tsp Dijon mustard 1 bay leaf 2–3 sprigs fresh thyme (or 1 tsp dried thyme) 2 tbsp flour 7 oz Gruyère, grated 4 oz white cheddar, grated 4 oz Parmesan, grated Salt, pepper, and a pinch of nutmeg Chives for garnish Instructions: 1. Preheat oven to 350°F. Butter a 9x13-inch baking dish 2. In a small saucepan, heat the half-and-half with Dijon, bay leaf, and thyme until just simmering. Reduce heat and simmer gently for 5–7 minutes. Discard bay leaf and thyme sprigs. 3. While the half and half is warming, melt butter in a skillet over medium heat. Sauté the onion with salt and pepper for 3–4 minutes. Add the garlic and cook until fragrant, 30 seconds. 4. Deglaze with wine and simmer until reduced by half. 5. Add the flour and stir constantly for 1-2 minutes. 6. Gradually whisk in the infused half-and-half, stirring until thickened (3–4 minutes). Season with salt, pepper, and nutmeg. 7. Remove from heat and gradually stir in the Gruyère, white cheddar, and Parmesan, reserving some for topping. Stir until smooth. 8. Layer potatoes in the prepared dish and pour the sauce evenly over the top, making sure all slices are coated. 9. Sprinkle reserved cheeses over the potatoes, cover with foil, and bake for 60–70 minutes. Place another baking sheet or foil beneath the pan to catch any drips. 8. Cue the holiday recipes. Potatoes are my absolute favorite!! I might share several this month because although I love traditional mashed potatoes, I also love to mix it up. So here’s potatoes sliced up and layered with onions and garlic and smothered in cheese sauce. Soo dang good. Potatoes Au Gratin 10-12 golden Yukon potatoes 1 lb sharp cheddar, grated 5 oz grated Parmesan 1 pt heavy cream 1/2 cup unsalted butter 1 tsp black pepper 1 tsp truffle salt *optional, opt regular pink salt* 1/2 white onion thinly sliced 5 garlic cloves, minced Preheat oven to 400. In a small saucepan add butter and minced garlic. Once the butter is melted add heavy cream. Warm everything on lowest setting so you butter and cream don’t burn. Shred blocks cheddar. Separate 1 cup shredded cheddar for topping, set aside. Add remainder of the shredded cheddar into the pot. Add 1/2 of the grated parm into the pot. Add salt and pepper. Mix with a whisk on low until the cheddar is completely melted. Meanwhile the cheese sauce is simmering, slice your potatoes into thin 1/8” slices. Slice your onion in half, then quarter the half and slice into 1/8” slices as well. You want to stack your potatoes and onions. Every 4 slices of potatoes, layer sliced onions. And go all the way around your roasting pan. I like to build from the outside in. Once you’re done layering your potatoes, pour the melted cheese sauce over. Then sprinkle remaining shredded cheese and grated parm. Add a little extra pepper on top. Cover with foil and bake for 1 hour. Then remove the foil and turn oven up to 425 and bake for 20 mins to get some color on top. Before serving allow to set for at least 15-20 mins. Potatotes + good cheeses + smoked pancetta...you can never go wrong😎 This gratin is on another level, maybe the best you can ever make at home🥔🧀 Can you believe it?🔥😍 @cookwithfez Ingredients for 4/6 people (28cm diameter pan): 2kg of potatoes 2 large onions (the sweetest you can find) 200gr of smoked pancetta 1/2 wine glass of White wine 40gr of Parmigiano reggiano 30ml of heavy cream Mixed herbs (sage, thyme, rosemary) Butter qb Preparation: Finely slice the onions and chop the pancetta into cubes. First, add the pancetta in the pan and let it cook for 5’. Then all the onions, cook for about 10’. Add few cubes of butter and all the Herbs. Deglaze with white wine and let it cook for 2 minutes. Finely slice all the potatoes with a mandoline (the thinner level) and cut every slice with a smaller circle, so that the potatoes will have the same cooking time and the shape of the gratin will be better. Cut some soft cheese to add more flavour. Let’s start layering all the ingredients. Grease a pan with softened butter and then place all the potatoes, very close to each other. Season the potatoes with salt and pepper and then all the onions. Add the soft cheese and parmigiano reggiano and a little bit of heavy cream. Repeat for at least three times . Shape the last level perfectly, season and put all the parmigiano on top. Cover everything with parcement paper and alluminium foil. Bake it at 360F for 1 hour. Then remove the foils and bake once again at 430F for 30 minutes until a beautiful crinchy Crust has formed.
