Before anyone comes for me, my kids DO love veggies, BUT.. when they have sore throats, they need something smooth and easy to swallow and this soup is perfect. Add chicken broth with veggies and cook until they’re soft, take your veggies out and blend your veggies with some broth and chicken bouillon paste. Add the smooth mixture back and mix. EP1 Soup Sundays: cook one pot to nourish you for days! 🍲 Everyone needs a good legume based soup and this Smoked Lentil Soup w/ Walnut Gremolata is my idea of a simple, yet delicious and warming meal 🔥 INGREDIENTS Soup: 3 Tbsp olive oil 1 white onion, sliced 2 leeks, sliced 3 carrots, diced 6-8 garlic cloves, minced 1 tsp smoked paprika 1/2 tsp coriander, ground 1/2 tsp cumin, ground 1/2 tsp black pepper 1 tsp salt 2 cups (480g) green lentils, washed 8-9 cups (2L or more) vegetable broth 5 cups tuscan kale, sliced 1 Tbsp soy sauce (optional) Gremolata: 3/4 cup walnuts, finely chopped 1 cup parsley, finely chopped 1-2 garlic cloves, minced zest of 1 lemon 1/4 tsp salt and pepper 1/3 cup olive oil (or more) INSTRUCTIONS: Heat 2 Tbsp olive oil. Add sliced onion, and leeks & carrots after 2 minutes. Cook 8–10 min until soft. Push the veggies to the sides to create a small empty circle in the middle of the pot, add the remaining 1 Tbsp olive oil and place garlic, smoked paprika, coriander, cumin, pepper & salt inside. Cook 1–2 min until fragrant. Stir in green lentils + vegetable broth. Close the lid, bring to boil, then let cook on a low simmer for 25–30 mins until lentils are tender. After 20 minutes add sliced kale. Simmer 5–10 more minutes. Adjust salt and add soy sauce for some umami. As the soup is cooking, mix chopped walnuts, parsley, garlic, lemon zest, salt & pepper. Stir in olive oil until spoonable. Serve soup topped generously with gremolata + a squeeze of lemon. #soupsundays #easyrecipes

It’s warm, cozy and so tasty! find the recipe below, enjoy xx Creamy Vegetable Soup Serves 4 Ingredients 6 roma tomatoes, halved 4 carrots, peeled and halved 1 red pepper, cut into quarters 1 white onion, halved 2 garlic bulbs 1 yellow zucchini, sliced 1 green zucchini, sliced 2 tbsp olive oil Salt & pepper 2 tsp dried basil 1 tsp Italian seasonings 1 tsp dried oregano 2 1/2 cups boiling water 1 cup milk or coconut milk handful fresh Basil Directions 1. Preheat oven to 425F degrees. Line baking sheet with parchment paper and set aside. 2. Prep and wash all veggies. Add to a lined baking sheet. Add garlic to tin foil, season and wrap and place on lined baking sheet. Add olive oil and seasonings over top of the veggies and toss together until veggies are evenly coated. Add veggies to oven to cook- cook for 40-45 minutes. Check on veggies half way. 3. Once veggies are cooked, add all veggies to a food processor or blender. Squeeze in roasted garlic once cooled. Add in salt & pepper, and boiling water. Blend until smooth. Add in milk and blend. If you want your soup thinner- add more water as needed. 5. Add soup to bowls and add milk, black pepper and fresh basil on top. If your soup needs to be at a warmer temperature - add to a large pot and bring to a boil.
