MINI EGG COOKIES❤️🫶🍪 Easter is the best time of year because of mini eggs 😂 once I open a packet it’s gone. Petition to make them available all year round. Enjoy these DELICIOUS mini egg cookies💅 #recipe (12 cookies) ❤️ 225g salted butter, room temp ❤️ 140g brown sugar ❤️ 110g caster sugar ❤️ 2 eggs ❤️ 1 tsp vanilla ❤️ 245g plain flour ❤️ 165g cake/pastry/biscuit flour*** ❤️ 1 tsp bicarb soda ❤️ 1/2 tsp baking powder ❤️ 1 tsp cornstarch ❤️ 200g chocolate chips (I used white/milk) ❤️ 250g mini eggs, crushed ❤️ Optional: lindt milk choc block (red packet) *Cake/biscuit/pastry flour is just normal flour with less protein. It allows for a moist cookie. I use the brand light house. In the shops it will be next to the other flours. You can just use 410g total of plain flour if you don’t wanna use two different flours. 1. Beat the butter until light in colour. Add the sugars & beat until fluffy. 2. Add the eggs & vanilla and beat until well combined. Don’t overbeat. 3. Add the flours, baking powder, bicarb and cornstarch. Mix until flour streaks just disappear. Add in the choc chips and crushed mini eggs. Fold through. 4. Divide the dough into 12 portions. To the centre of each portion add a piece of lindt chocolate. I added a square of the milk (red packet) and white (white packet) together in the centre. 5. Heat the oven to 180°C, bake 6 cookies at a time evenly spread on a lined baking tray. Bake for 10-12 minutes. Repeat with next tray. Don’t forget they’ll continue to cook as they cool down. 6. Optional: top with white chocolate & crushed mini eggs. ENJOY!!!! #minieggs #cookies #baking #easter

manifesting spring with these cookies 🎀🌸 Ingredients: * 3 cups flour * 1 teaspoon baking soda * 1/2 teaspoon baking powder * 2 sticks unsalted butter, softened * 1 1/2 cups sugar * 2 eggs * 1 teaspoon vanilla extract * 1 teaspoon rose water Rose Water Icing: * 1/2 cup confectioners’ sugar * 1/4 stick of butter * 4 oz cream cheese * 1/8 teaspoon rose water * 1/4 teaspoon vanilla extract * Instructions: 1. Preheat your oven to 375 degrees. 2. Add dry ingredients to mixing bowl and combine. 3. In another bowl, add the butter and sugar and mix using a hand mixer on low until well combined (about 2 minutes). 4. the eggs, vanilla extract, and rose water and mix on low for another minute. 5. Add half of the dry mixture to the wet mixture, mix to combine, then add the second half. 6. On a floured surface, take 1/4 of the dough and roll it into a ball. Using a rolling pin, roll it out evenly on the counter. 7. Cut the dough using cookie cutters 8. I rolled them into balls and made indentations into each with the end of a rolling pin, but this is optional 9. Bake at 375 degrees for 10 minutes on lined cookie sheets 10. For the icing- melt the butter and set it aside so it can cool down. Beat the cream cheese and medium with your hand mixer then add the cooled butter and beat again until they are combined. Sift in the powdered sugar, and beat on low until it’s just combined. Then add the rose water and vanilla 11. To make the icing, combine the confectioners sugar, milk, rose water, food dye, and vanilla extract. Add more milk if you would like a thinner consistency. 12. After the cookies have completely cooled, pipe the icing in swirl pattern 13. Decorate however you like and enjoy :) **These can also be made with storebought sugar cookie dough, if you’re looking for an easier alternative! #rosewatersugarcookies #sugarcookierecipe #flowercookies #bakingtherapy #scratchbaking
