Salty, tangy, and so good! 🥒 The sweet spot for me is 4 days for the perfect crunchy pickles. Here’s what you’ll need: Persian Cucumbers (enough to fill the jar), can cut in halves or fourths, or leave whole Optional Add-ins 1 bunch dill 1 jalapeno sliced 2 inches organic ginger sliced ½ tbsp whole black peppercorn Sterilized Jar Non chlorinated water 3% Non-iodized Salt If you do not have a scale, you can create a salt water brine with a ratio of 1 tablespoon of salt to 2 cup of water How to Make Lacto-Fermented Cucumbers 1️⃣Prep cucumbers: Wash and trim ends 2️⃣Pack jar: Add cucumbers, dill, and optional add-ins to a clean jar. 3️⃣Pour brine: Use the scale to calculate 3% salt brine (if you don’t have a scale, use the ratio above). Cover cucumbers completely. If needed, use a weight to keep them submerged. 4️⃣Ferment: Cover and let sit at room temp (68–75°F) for 5–10 days. Open the jar daily to release the pressure. 5️⃣Taste & store: When tangy to your liking, seal, and refrigerate to slow fermentation. Enjoy within 2–3 months. These pickles only get better with time!

If you’re new to fermentation- let me save you lots of $$$ on heavy, pricy crockery and suggest these @masontops glass weights and airlock lids instead! They’re compatible with all of your glass mason jars- meaning you don’t need any new vessels to ferment in. I haven’t touched our crocks in years because I’ve switched over to this system instead and I’m obsessed. Use them to make this carrot ginger kraut! CARROT GINGER KRAUT: Makes ~1/2gal+: •2 medium cabbages •4-5 good sized carrots •big chunk of ginger •1tbsp mineral salt METHOD: •core and finely slice cabbage, add to a big bowl •grate carrots and add to the bowl •peel ginger and blend it with a few tbsp of water and pour over the vegetables •add the salt and use your hands to squeeze the veggies and work in the salt •let the veg sit for 30 minutes allowing the salt to draw out liquid •tightly pack the veggies into a glass jar with all the liquid brine, tamping down as you go •place a cabbage leaf over the top of the veggies and weigh down with a Mason Tops glass weight •if needed, add a touch of salt water to ensure everything is below the brine and place your Mason Tops fermenting lid and ring on the jar •allow to ferment in a moderate temp area until the desired sourness is achieved. No need to release any gases as the lids self regulate. •remove the weight and leaf, secure with a regular lid and enjoy a big spoonful of kraut with any meal or snack! •this will keep in the fridge for longer than you’d think!
